July in Michigan calls for BLUEBERRY Treats! I don't make the rules.😋🫐🍋 Blueberry Lemon Glazed Bread

🫐🍋Ingredients:

-2 Cups Einkorn Flour
-1 Cup Coconut Sugar
-1 Tsp Baking Soda
-1/4 Tsp Salt
-Zest of 1 large Lemon
-2 Cups Blueberries
-3/4 Cup Milk of choice
-1/4 Cup Lemon Juice (Around 2 lemons)
-1/3 Cup Coconut Oil, melted
-1 Egg
-1 Tsp Almond Extract

Optional Glaze:

-1 Cup Powdered Sugar
-3 TBSP Lemon Juice
-1 TBSP Grass fed Butter, melted
-1/2 Tsp Vanilla Extract
-(I wanted it extra Lemon so I added the zest of 1 Lemon to this too)

🫐🍋Instructions:

-Preheat oven to 350. Line a loaf pan with parchment paper and set aside.
-In a large bowl, whisk together the flour, sugar, baking soda and salt together. Fold in the blueberries.
-In a small bowl, whisk together the milk, lemon juice, oil, egg and extract.
-Make a well in the dry ingredients and pour in the wet ingredients. Gently stir with a spatula until only combined.
-Pour batter into the load pan and bake for 50-60 minutes or until a toothpick inserted comes out clean.
-While bread is cooling, prepare the glaze. In a medium bowl, whisk powdered sugar, lemon juice and zest, melted butter, and vanilla until smooth. Pour over cooled bread.

You know what's NOT giving me explosive D this month? Wild PURSLANE from my property!

I had a friend tell me once they were nervous about eating wild food from their yard because of dog and rabbit p**p. That's why you wash wild food my friends, just like you do store produce. And if this month has shown us anything, it's that even store produce, including pre washed greens, aren't always safe from "p**p." I'll take my chances on my yard finds. 😎

Purslane is technically a succulent, but is considered to be one of the most nutritious weeds, a "superfood" green. It is full of Omega 3's, antioxidants, Vitamin A & C, Magnesium, Calcium, etc. Purslane can be slightly tangy with almost a salty flavor, perfect for adding a nutritious boost to egg scrambles, avocado toasts, fresh salads, sandwiches, or stir-fries. It's easy to grow and thrives in the heat/dry conditions that cause other greens to bolt.

(Lunch: Eggs fried in homemade dairy free Pesto and Feta Crumbles, over fresh Purslane. Chicken Sausage. Homemade Hummus and Cucumber.)

Transformation Tuesday: Pursuing the Rise of a Phoenix Heart. ❤️🔥

Life changes and so it changes us. We are forced to be many things or do many things over different life chapters, perhaps evening becoming or defaulting to what we need to be or do to simply and barely exist and survive.

But I love the eternal art of UNRAVELING. The eternal art of BECOMING. The glimmer that nothing is ever really set in stone. That even “death” can bring chances, possibilities, and newness. Endings can be beginnings. Falling apart can be allowed and nurtured into pivotal course corrections and shifts. I can definitely say I am very much the same person I was my whole life, while at the same time not being at all the same person in my 30s as I was in my 20s. I’m still figuring out who it is that I want to be in my 40s now. It’s okay for you to be unraveling, becoming, and still figuring out who you want to be no matter the age or circumstances at play.

Consider when you feel buried in life, that sometimes in the long run this can also be an opportunity for planting. Losing momentum is normal in life, how can you channel more renewed energy back?

“It’s OK if you fall down and lose your spark. Just make sure that when you get back up, you rise as the whole damn fire.” 🔥

When our THOUGHTS run totally unchecked or unchallenged, they often impact how we FEEL. This in turn can dictate or direct the ACTIONS we do or don’t take. When you notice yourself spiraling into critical and all or nothing thinking, instead focus on a small, comforting, desired action you wish to take or could take in that moment to help break this loop. Engaging in a desired action for what emotion it will illicit, in turn impacts your thought process. It’s totally inverting this critical all or nothing flow, rather than letting your thoughts determine how you feel, consequently impacting your actions. It’s a process that begins with gentle awareness and observation with non judgement. Remind yourself in the grand scheme of things, most thoughts are just thoughts; we don’t have to take them ALL seriously. Flip the script! Interrupt the loop. 🧠
