Marry Me Calzones!

This is a Garden to Table must try recipe! 🤩

I placed half a sliced red onion and 3 small long purple eggplant (sliced into coins) on a baking sheet with some olive oil and roasted in the oven at 400 degrees F for 15 minutes. Set aside.

Mix together:
1 pound of ground turkey or chicken
2 cloves of crushed garlic
1 egg
1/2 C ricotta cheese
1/2 C soaked Panko breadcrumbs
1/4 C grated Parmesan cheese 1/2 C grated zucchini
salt & pepper

Divide the meat mixture into four patties on a parchment paper lined baking sheet.
Top each patty with 1/4 wheel of Boursin cheese.
Then top the cheese with a tablespoon or two of the roasted eggplant/onion mixture, add 2 fig slices and some dried rosemary.
Cut the parchment paper into four squares to help in folding the patties into pockets.
Top with a little extra Parmesan cheese.
Bake in the oven at 375 degrees F for 45 minutes.
Let stand for about 10 minutes to cool down before serving. Enjoy!
