How do we know when lavender is ready to harvest?

Lavender gives us a few clues.

These stems show different stages of bloom, from tight buds to open flowers and eventually spent blooms. For dried lavender, we’re looking for stems with good color and plenty of buds still intact rather than waiting until every flower has fully opened.

Even within the same field, plants can be at different stages at the same time. That’s exactly what we found this weekend. Some of our lavender still had enough fresh growth for one more small harvest.

We thought it might be time to deadhead.

Then we took a closer look.

The lavender was still blooming, the pollinators were still busy, and there was more lavender ready to cut. So instead of deadheading, we harvested again.

The field doesn’t always follow the schedule we expect, and this weekend was a good reminder of that.

Harvest is only the beginning.

After our lavender is dried, some stems are kept intact for bouquets, while others are stripped and sifted to collect the buds.

It's a hands-on process, and sometimes we have a little extra help.

No two harvests are exactly the same.

This photo is from our 2024 harvest, and looking back is a reminder of just how much can change from one growing season to the next.

Weather, timing, and conditions in the field all play a part. Some years bring longer stems or fuller blooms, while color and timing can vary from season to season.

You can plan for the growing season, but the field ultimately has a say in how it turns out.

Before our dried lavender bouquets make their way into homes, each stem is harvested, carefully sorted, and bundled by hand before beginning the drying process.
