Sugar Grove Family Farms will be featuring the "Carolina Bowl" with Sugar Grove Mustard Rubbed Smoked Pork and Sugar Grove Free Range Egg over fried potatoes and topped with Carolina slaw. We know that Adam Shallenberger has what it takes to create winning dishes. Chef Adam went to Mahomet-Seymour schools before attending Le Cordon Bleu culinary school in Atlanta. He worked for a time as a sous chef at Ellerbe Fine Foods in Fort Worth, Texas — chosen in 2010 as one of Bon Appetit magazine's best new restaurants. Chef Adam returned to Champaign-Urbana in 2013 to work at Silvercreek and Dublin O'Neil's. He also worked at V. Picasso (where he won last years' Artisan Cup & Fork) before opening up the Fired/Smoked Food Trucks that you see around Champaign-Urbana.
Meyer Produce is a husband and wife team that own and operate a 25 acre produce farm 30 miles south of Champaign-Urbana. They are vendors at the Champaign Farmers Market and Urbana Market at the Square, where it is easy to see the quality and variety of the products that they grow every week. They have a number of hoop houses to extend the growing season. Adam is going to love having such a wide variety of outstanding produce to select from.
Sugar Grove Family Farms believes in grass-based farming that respects both the animal and consumer. Gently raised animals that have had the benefits of personal attention and premium, plant based nutrition provide greater health advantages to their consumers. Through sound land stewardship practices, they also seek to continuously improve the quality of their soil and water resources. Sugar Grove chooses to raise their beef 100% grass fed and finished and their pork and chicken on grass with supplemented organic/GMO-free grain in natural environments. By doing so Sugar Grove raises happier, healthier animals while allowing them to utilize their natural qualities and behaviors to better promote a self sustaining farm.
Marcoot Jersey Creamery is a seventh-generation family-owned Jersey dairy farm in Greenville, Illinois. The family is passionate about the quality of their farm, their milk, and their products, and they are pleased to share that passion with you. Marcoot handcrafts only the highest-quality artisan and farmstead cheeses. Sustainability is a key component for their family and farm and it guides the methods in which they take care of the herd, and the way they produce their cheese. Their cheese is made solely from the milk of their own Registered Jersey, primarily grass-fed cattle. The 65 milking Jersey cows enjoy pasturing on the paddocks in a variety of grasses to provide abundant natural nutrition. No hormones are given to the cattle. The heifers also graze in the pastures and get to enjoy protein-filled whey; a byproduct from our cheese production. The Marcoot cheese cave is designed after the man-made cheese caves in Switzerland to provide natural aging for cheese while providing energy efficiency and sustainability for the creamery.
