Red drum up front. The crew in the background.

Fresh cut fillets on the table, the whole team moving behind them — a pretty good snapshot of how this place works. Good fish doesn’t happen by accident. It takes a shop full of people putting in the work every day. 🐟

Tyler cutting fresh Chilean sea bass sides.

Fun fish fact: Chilean sea bass isn’t actually a sea bass at all — it’s Patagonian toothfish. The name “Chilean sea bass” was created for the American seafood market in the late 1970s because, understandably, Patagonian toothfish wasn’t exactly flying off menus. The name stuck, and today it’s the market name most chefs and customers know it by.

Whatever you call it, it’s one beautiful piece of fish. 🐟🔪

This is what fresh should look like.

Clean color, tight texture, and that unmistakable shine. Fresh corvina up close — exactly how we want it to look when it hits the cutting table. 🐟

Good fish doesn’t stop at the fillet.

We’re always happy to save frames, collars, and heads for our customers — whether they’re going into stock, soup, sauces, or something special on the menu.

There’s a lot of good eating left on the cutting table. 🐟

The fish cutters doing the dang thing.

Whole fish on the table, knives in hand, and everybody moving. This is where a lot of the work happens before your seafood ever makes it to the kitchen.

Not every fish leaves our shop the same way.

Here we’re prepping branzini with a custom butterfly-style cut for one of our Italian restaurant customers. We’re happy to handle the seafood prep your kitchen needs before it ever reaches your door.

Less prep during service. More time for your kitchen to focus on the plate. 🐟🔪

Cutting the fish is only half the job.

Andrew checking the route sheets and making sure these pieces of swordfish and halibut end up in the right tubs for the right customers.

Fresh seafood takes a lot of hands, a lot of organization, and a lot of double-checking before it ever leaves the shop. 🐟
