At Edgar’s Acres, every harvest has a purpose.

This week, Farm Manager, Ben pulled 120 pounds of collard greens straight from our fields and is now headed to Edgar’s Grille for Thanksgiving meals and holiday boxes.
Everything grown here supports hands-on learning for Helms College students and Goodwill’s life-changing mission.

We’re planting a mix of rye, oats, and field peas as our fall cover crop to help protect the soil, add nutrients, and prepare for next season’s harvest.

We also welcomed the Helms College Fresh Fork Society, a group of culinary students passionate about farm-to-table learning. They spent the day harvesting sweet corn and getting a firsthand look at how ingredients grow before they reach the kitchen.

Every visit helps connect classroom learning to real-world experience and supports Goodwill’s mission of building lives, families, and communities through education and work.

🐝 Busy Bees at Edgar’s Acres
Last week, we worked alongside Carly from the Clarks Hill Beekeepers Association to scout our hives for pests. Thanks to quick action, our bees are strong, healthy, and stocked with sealed honey for the winter ahead. No extra sugar water is needed. This is just the beginning as we look to expand our bee program in the years to come.

🌱 From Greenhouse to Field
Our greenhouse is bursting with young collards including Flash, Cash Crop, and a Georgia hybrid. These will be transplanted soon to grow into hearty fall and winter crops.

At Edgar’s Acres, every season brings new growth and new ways to learn. 💛

🐓🌱 Life on the farm keeps growing!
Our chickens are getting bigger (and so are the egg baskets 🥚✨). Out in the fields, crops are thriving under the windmill’s watchful spin.
