My tip is to check the cupcakes after 15 minutes of cooking. I think the cook time is way too long.

Tonight I made White Chicken Lasagna with Spinach. I came across this recipe and was interested because I have a friend who has a tomato allergy. I immediately thought about how this could be a nice alternative to regular lasagne. Like the white pizza equivalent of lasagne.

I enjoyed this and my daughter did too. My husband said I went a little overboard with cheese. I tend to measure cheese with my heart instead of following a recipe. I think there is no such thing as too much cheese.

This is one of my favorite recipes. S’mores have such a nostalgic taste. I double this recipe and I make it even more simple by using either marshmallow fluff or microwaved marshmallows that I spread on top. Today I went with the microwave method because I had a bunch of leftover star marshmallows from 4th of July.

My favorite way to make fish tacos is by crusting them with crushed tortilla chips. This makes for a crunchy crust without having to fry the fish. Late July Organic Snacks makes some of my favorite chips. Tonight I crushed up these nacho cheese chips and just pressed them into finger size pieces of sablefish. I cook the fish on a cooking sheet at 350 in the oven for 10-15 minutes.

I made my own mango salsa by dicing up a mango, 1 tomato, 1 slice of onion, lime juice, and parsley. I served the fish in my favorite taco shells (Siete Family Foods), which I warm up on the stove. The whole meal comes together in less than 30 minutes and has a ton of flavor.

Today I made Duabi chocolate brownies. I’ve been thinking about this for a while. I wanted to use my favorite brownie recipe as the base. I looked up some other Dubai chocolate brownie recipes to determine how to finish off the recipe.

Tonight, I cooked Creamy Sausage Pasta for dinner, and the outcome was outstanding. My family loved the dish, and I'm disappointed that we didn't have any leftovers. I chose gluten-free lasagna noodles and swapped heavy cream for coconut milk. I also incorporated some fresh thyme, which I had available.

I made these salmon cakes earlier in the week, and they came out delicious. I used the same ingredients as the recipe, but made a few changes to have these come out more like how I make my crab cakes. I used only 1/4 cup of almond flower, for minimal filler. I let the mixture sit in the fridge for 30 minutes to firm up before forming it into large, mounded cakes. Then, I broiled them until the tops were golden brown. I did not use any of the sauce for the recipe (to cut calories), but the cakes were moist and delicious, so I did not think it was needed. I froze the extras for easy lunches.
