Tonight for dinner, I made this quick and easy cod recipe. The whole family loved it! I chose some thick cuts of cod from Wegmans.

I cooked them in the air fryer setting on my oven until they reached about 135. The fish came out buttery and flavorful. I squeezed the cooked lemon on top of mine after it came out of the oven. The whole meal took about 39 minutes including 15 minutes of cook time.

I love crispy chicken. It's easy to make and feels comforting on a weeknight. The secret to crispy skin without frying is to dry out the skin. For this dish, I placed the bone-in, skin-on chicken thighs on a rack over a baking sheet the night before I planned to cook.

I created a rub with 2 tablespoons of avocado oil, salt, pepper, onion powder, dill seasoning, parsley, and lime seasoning. I rubbed this mixture over each piece of chicken and placed the pan into the refrigerator, uncovered, overnight. The next day, I used the air fryer setting on my oven and cooked the chicken at 400 degrees for about 20 minutes until the skin on the outside was crispy and the inside temperature reached at least 175.

Want a sweet frozen treat that you don’t have to feel guilty about eating? I made Snickers-inspired frozen yogurt bark.

Ingredients:
1. 1 cup peanut butter powder
2. Water
3. 2 cups yogurt (plain or vanilla)
4. 2 tablespoons maple syrup (if using plain yogurt)
5. 1 cup chocolate chips
6. 1 tablespoon coconut oil
7. 1/2 cup peanuts

In one small bowl, mix the peanut butter powder with water to create a syrup-like consistency. In another bowl, mix 2 tablespoons of syrup into the plain yogurt (skip this if using vanilla yogurt, which already has sugar). In the last bowl, mix the 1 tablespoon of coconut oil with the chocolate chips. Microwave in 30-second intervals, stirring after each interval, until the chocolate is fully melted.

Line a cookie sheet with wax paper. Use a spoon to spread the yogurt on top of the wax paper. Evenly sprinkle the peanuts on top. Drizzle the chocolate and then the peanut butter on top. Use a spoon to swirl the mixture by running it vertically and then horizontally through the mixture. Place the cookie sheet flat in the freezer and freeze overnight. The next day, take the bark out and break it into pieces. Store in a container in the freezer.

For Mother’s Day I made peanut butter pie. The recipe is below. I went with a Nutter Butter crust. Also the recipe calls for slightly more than a pint of heavy cream for making the whipped cream. I just went with a pint to avoid buying a larger size.

I think a poached egg makes breakfast feel more special. I usually eat oatmeal with cheese and everything bagel seasoning for breakfast every day. Today, I decided to jazz it up with a poached egg.

This website is the method I use for making easy poached eggs. I also posted some videos in the comment section. You will notice that I drop my egg in right from the strainer. I don't see a point in getting a ramekin dirty as an extra step.

This weekend, I made buttermilk biscuits. One batch of small ones for my daughter to eat with meals, and one batch of regular-sized ones.

Below is the biscuit recipe I use. I don't use honey and instead add 14g of sugar. I think the honey is hard to mix in.

The trick to great biscuits is having small pebbles of butter and making sure all of your ingredients are as cold as possible and stay that way until you put your dough in the oven. You want the butter to slowly melt, which is what creates flaky layers. I grate my butter with a cheese grater and freeze it the day before I plan to bake.

I also cook scraps. I find that after initially cutting my biscuits, I can form the scraps together and get one more good cut. After that, if I try for a third round I get Frankenstein looking biscuits. I decide to just cook the scraps and eat them as snacks. I included a photo of my pan that went into the oven with the scraps on it.

Tonight, I made a rosemary-crusted rack of lamb for dinner. This is an easy recipe that comes out so delicious I won't even share it with my daughter (trust me, she is well-fed and generally eats everything I eat). To make it, follow these steps:

1. Preheat your oven to 425 degrees.
2. Take a trimmed rack of lamb, season it with salt and pepper lightly, and sear all sides for about a minute on each side.
3. Set the rack on a lined baking sheet.
4. Use a basting brush to coat all sides with Dijon mustard.
5. Combine 1/4 cup of panko bread crumbs, 1 teaspoon of rosemary, 1/2 a teaspoon of salt, and 1/2 a teaspoon of pepper in a bowl and mix together.
6. Coat the lamb rack with the breadcrumb mixture on all sides.
7. This is optional, but I spray the outside with avocado oil to make it extra crispy.
8. Cook in the oven for 15-20 minutes until the middle reaches 125.
9. Take the rack out and let it rest for 5-10 minutes. It will continue to cook slightly while resting, bringing the internal temperature to around 130.

Flank steak is a family favorite meal that is easy and delicious. I make my marinade using 3/4 cup of sugar, 1 cup of coconut aminos (you can substitute it with soy sauce), and one cup of water. Place the steak in the marinade the night before you plan to cook.

At dinner time the next day:

1. Take the steak out of the marinade and grill the steak for about 5 minutes on each side.
2. Let it rest for 10 minutes.
3. Slice against the grain. To do this, slice at an angle starting at a corner instead of slicing horizontally or vertically. This makes the meat more tender and easier to chew.
