The Visiting Chef Program
The Visiting Chef Program partners with exceptional volunteer restaurant, catering, military, and personal chefs who come to the Warrior Retreat at Bull Run in Haymarket, VA and create once in a lifetime extraordinary meals for our injured warriors and their families. The program takes a farm-to-table approach to providing meals with fresh vegetables and herbs right from a garden on the property.
Willing Warriors operates 2 beautifully furnished 5-bedroom homes on 37 acres at the foot of the Bull Run Mountains in Haymarket, VA. We bring wounded Warriors and their families to the Warrior Retreat at Bull Run for a 5-night 6-day respite away from the hospital and rehab environments. The benefits to the Warrior and their family are overwhelming. We realize all our combat wounded Warrior guests suffer from Post-Traumatic Stress and their spouses report it has often been years since they have been out to a restaurant. Our volunteer chefs bring a culinary experience to the family they almost always described as the best meal they have had. The families learn valuable cooking tips from the chefs and everyone has a wonderful time. Here is a great article about the program from the Food Section of the Washington Post.

Put me in, Coach Ken! Very excited to be at the helm with this crew tomorrow evening preparing a 5 course meal for this week's warrior and family who have given so much for us. They like bbq, Chinese and Mexican. So, I/we riffed on a fusion menu. Cannot wait!! Pics to follow from our Fearless Leader, Larry Zilliox!

Course 1 - Tostada with a white bean green chili puree, topped with a smoked chinese bbq beef, sesame seeds, chives
Course 2- Butternut squash souffle (ancho chili, mexican chocolate infusion) Lime crema drizzle
Course 3 - Jicama and Mixed Green Salad (cilantro/lime vinaigrette, manchego cheese shavings, pepitas, cracked pink pepper corns)
Main
Chicken Tinga tacos. Mild chili, citrus, agave, braised chicken served on a warm soft tortilla with house pickled onion, jalapeno, lime crema, cotija cheese and cilantro
Dessert
Flan w/caramel sauce and fresh strawberries
We have a special piece in our heart for all of these chefs that go far and beyond for our families. We have the blessing to be guest (my warrior, our kids and I) last year and the bond we create with them is unique and special to our family specially to our daughter Zianny who is 10 now and since really little her dream has always been to be a great chef. The caring, kindness and love that this gentlemen spreads make her more enthusiastic to continue her dream. They allowed her to help in the kitchen, later gave her the surprise to bring her back and be their sous chef and the most recent blessing: to be mentor by the best! We cannot thank you enough to give her confidence, and specially to make her believe she is worthy to have dreams and try to be the best! God bless you all!!!!!!!!
Two years ago we had a unique experience, we had a delightful dinner cooked and served by Chef Ken Gardner, he surprised us with an amazing dinner and dessert, thank you my friend for everything you do for all of the families at the retreat.
