🍷 WHY WE PUNCH DOWN THE CAP 🍷

During red w**e fermentation, grape skins and solids rise to the top, forming the “cap.” W**emakers punch it down to:

🍇 Extract color, flavor & tannins
🌡️ Manage fermentation temperature
🦠 Prevent spoilage
🫧 Support healthy yeast activity
🤚 We do this process by hand for a more delicate touch
