✨ Ingredients:
For the Stew:
2 lbs beef chuck, cut into 1.5-inch cubes
¼ cup all-purpose flour
Salt & black pepper
3 tbsp olive oil
1 large onion, chopped
4 cloves garlic, minced
6 cups beef broth
1 cup red wine (or extra broth)
1 tbsp tomato paste
1 tsp dried thyme
1 bay leaf
4 medium carrots, peeled & cut into thick chunks
1 lb small potatoes, halved
1 cup frozen peas
For Serving:
4 small, round, crusty bread loaves (sourdough works great!)
Fresh rosemary & dill for garnish

Sear the Beef: Toss beef cubes with flour, salt, and pepper. Heat olive oil in a large Dutch oven over medium-high heat. Sear beef in batches until deeply browned on all sides. Set aside.
Build Flavor: In the same pot, cook onion until soft. Stir in garlic and tomato paste; cook 1 minute until fragrant. Pour in red wine to deglaze, scraping up browned bits.
Simmer the Stew: Return beef to the pot. Add beef broth, thyme, and bay leaf. Bring to simmer, then reduce heat to low, cover, and cook 1.5 hours.
Add Vegetables: Stir in carrots and potatoes. Cover and simmer another 45–60 minutes, until beef and veggies are fork-tender.
Finish with Peas: Stir in frozen peas and cook 5 more minutes. Remove bay leaf. Taste and season with extra salt and pepper if needed.
