Sunday meals prep days start this week (9/13)! Weekly menus will now come out every Thursday morning!
For SUNDAY meal preps:
-order by Saturday evening. You can pick up your meals Sundays from 4-7pm at the Ironrange Makerspace (401 W 41 St Hibbing), or delivery Monday morning Hibbing to Virginia
For WEDNESDAY meal preps:
-order by Tuesday evening. Pick up Wednesday 4-7pm, or delivery Thursday morning

My home away from home is down on the south shore of Lake Superior where there’s lots of end of the summer produce to be picked this weekend and I found a great spot to source local beef for meal preps! Oh my goodness this weeks swiss chard farro salad with roasted chickpeas and apples is so good, nutrient dense and so darn fancy! Who knew you could love a salad this much! Chard is one of those greens that holds up to cooler temps and we’re coming into apple season, so this little pretty will be back on the menu again this fall!
