After the big holiday you may have a low propane tank. If you don't have a gauge there are a couple of ways to check the gas level.
1. While in use look at the side of the tank to see if there is a level at which there is a bit of sweating or coolness. The gas level in the tank will be cool to the touch. The empty part will be warm.
2. If you try step one and can't see a difference in the temperature on the side of the tank try this. Boil a couple of cups of water. Pour the hot water down the side of the tank. Run your hand down the side where you poured the water, the warm metal is the empty part and where the cooler part is that is the level of your gas.
As a general rule of thumb when the tank gets down to a 1/4 tank full or 3/4 empty, your view depends whether you an optimist or pessimist, you should get it filled. YOU DON'T WANT TO RUN OUT IN THE MIDDLE OF AN EVENT!!!!
And remember, when transporting full tanks secure them in an upright position.

Just a reminder of good local wood for grillin' and smokin'.
Alder - all meats especially poultry and fish
Apple - all meats
Cherry - all meats
Maple - all meats especially poultry and pork
Oak - all meats (use caution burns very hot use indirectly)
Peach - all meats especially poultry and pork (peach is very similar to hickory but milder and sweeter)
Pear - all meats
Plum - poultry and pork
Birch - poultry and pork (similar flavor to maple)
Apricot - all meats (good fruity flavor)
Use any of these on charcoal but make sure and soak them in water or wine for 4 or 5 hours before using.
When grillin' put wood in a cast iron pan on the open flames.

Have you ever tried to grill corn on the cob? Check this out for something different on your grill this weekend.
Corn with husk on.
1. Cut the protruding silk from each ear. The silk will ignite.
2. Put unshucked corn on the grill turning every couple of minutes to ensure even grilling until the husks are nicely charred on all sides. It will take about 10 to 12 minutes on a high heat grill. To check and see if the corn is done take one ear off and gently peel off a small portion of the husk, if the corn is steaming and bright yellow they are done; if not steaming continue cooking for a couple more minutes.
3. If you want grill marks on the cob itself, pull off husks and put the cob back on the grill, turning every minute for about 3-4 minutes so that all sides will have grill marks.
4. Dunk cobs in a bowl of hot melted butter. For even better butter, try adding your favorite herbs and spices to jazz-up the butter. Try things like: smoked paprika, rosemary, thyme, cilantro, cayenne, oregano, finely chopped garlic, finely chopped onions, lime juice and even mustard. Making flavored butter the night before and refrigerating allows the flavors to really come through.

For two tips on easy cleaning and keeping cooking surfaces sanitary ands always ready for the next BBQ, try these methods.
1. Sprinkle dry Arm & Hammer Baking Soda on a damp scrub brush, scrub the grill adding more soda as needed, then rinse clean with warm water. For tough greasy stains, scrub with a wire brush using baking soda paste (3 parts baking soda to one part warm water) and rinse thoroughly with hot water.
2. When done cooking, turn grill on high, (gas grills) or cover charcoal/wood grill with lid and let set for 10 - 15 minutes. Scrub off with wire brush and wipe clean with dry cloth. If you will do this method after each cook you will not need number 1.
Keeping grills clean and free of cooked materials will ensure of safe and delicious grilling and or smokin'.

I hope everyone's 4th of July grillin' and smokin' event is delicious! Remember to let rubs and marinades work for at least 24 hours, longer is better, if you use soda pop for a marinade make sure it is not diet, pull membranes off of ribs and stay away from direct heat and flames for all meats especially larger cuts.

When trying to decide what is the best wood to use for flavoring on the grill or smoker, there are a lot of great choices. It really comes down to preference. I have included a list of local woods that my help the deciding process. When grilling make sure to soak small chips and chunks for several hours and for large fist sized chunks soak for 24 hours prior to grilling. Soaking slows down the burning and increase flavorful smoke. Try soaking in whiskey or wine, imparts a unique flavor.
Alder:~ mild flavor ~ pork, fish, especially salmon, and poultry
Apple: ~ mild flavor ~ pork, poultry & ham, turns chicken skin dark brown
Apricot: ~ mild & sweet similar to hickory ~ poultry, pork & ham
Birch: ~ strong flavor ~ pork and poultry
Cherry: ~ mild & sweet ~ all meats (my personal favorite)
**Hickory: ~ strong flavor ~ all meats especially beef & lamb, mix hickory with other woods especially sweet woods, should not use alone
Maple: ~ sweet ~ all meats especially poultry and ham
**Mesquite: ~ very strong flavor ~ all meats, be careful it burns very hot, should be mixed with other woods, can be too strong at times
Oak: ~ strong flavor ~ all meats especially beef or lamb, burns hot, should be mixed with other woods
Peach: ~ sweet & mild ~ poultry and pork
Pear: ~ sweet & mild ~ poultry, pork and lamb
Pecan: ~ strong flavor ~ all meats, hint of nutty flavor
Plum: ~ very sweet & mild ~ all meats
Walnut: ~ heavy smoke flavor ~ all meats, should be mixed with other sweeter woods
** These woods need to be purchased, they do not grow in Oregon

This is a list of local woods.

**** WOODS TO AVOID AT ALL COSTS: cedar, cypress, elm, pine, fir, redwood, spruce and sycamore. These will make your meat taste like you soaked them in motor oil ****

My wife and I bought some Sweet and Smokey from the booth at bauman farms. It's seriously my new favorite bbq sauce. I'm a self proclaimed bbq sauce expert. I need more of this in my life!

I bought a bottle of your bbq sauce at a fair at Christmas & LOVED it! Was told that as of January 1st, they would be in all Fred Meyer stores. I've been anxiously looking for them at the Albany Fred Meyer, but as of today have not seen them. Are they not going to be in there?
