German-Style Pilsner made with Jasmine Rice
Collaboration with Benchtop Brewing (Norfolk, VA)
Back in the beginning of March, our friends from came out for an experiment that would push the boundaries of our cumulative lager experience! Typically, rice used in brewing is either malted or flaked to make the starches stored in the grain available, but both of those processes have a significant impact on flavor. So in order to preserve as much of the natural flavor of the rice as possible, we picked up some fresh Jasmine Rice a la Li Ming's Grocery and brewed our first beer using raw, whole rice. We began with a cereal mash, a brewhouse technique that includes boiling the rice and adding it back to the mash to gelatinize the starch in the rice, and a large amount of German Perle hops added throughout the boil to provide balancing bitterness and traditional lager flavor. Pivot Pils has aromas of fresh wild flowers, warm hay, and finishes clean, bright, and crisp.
