My Paris trip is half over. Just finished a cooking class with Paule Caillet where we shopped in the Le Halles markets and cooked in her school in the wonderful Marais District. Also had a wine tasting class at O'Chateau also in Le Halles. So far David Lebovitz has been full of good recommendations.

The menu is: Mushroom & Goat Cheese Tartletts, Citrus & Greens Salad, Chicken & Andouille Gumbo, Mardi Gras Pasta with fresh linguine, crawfish, shrimp and roasted asparagus in a lemon cream sauce, and a Carnival King Cake to finish things off!

Celebrate the holidays with some friends at Auburn Twin Oaks Winery on Dec 2nd as I'll be facilitating a 5-course Tasting Menu paired with the new Chilean-style wines. We start with an Italian Trio: Tomato & Rice "Olives, Baked Ricotta, and Pappa Al Pomodoro followed by Seven Seas Soup, then Pork Tenderloin in Style of Porchetta w/ Lime Spiked Sweet Potato Puree & Brussel Sprout Chips, THEN Wild Mushroom Risotto with Sliced Strip Steak & Gorgonzola Sauce, finished with Choc Diamonds w/ Rasp & Hazelnuts & Choc Ganache Filling. It would be silly to miss it. Call the winery for reservation!

Teaching a Mayan Tasting Menu tonight at the Western Reserve School of Cooking and then teaching a Chilean/Argentinian wine & food dinner on Monday at Gervasi's Cucina. Life is good when I get to play with these flavor profiles!
