Easy and Juicy Chicken Kebab

This is one of my favorite easy-to-make dinner ideas. The key to juicy, tender chicken is to marinate it for 2-3 hours or all day. I usually serve this with lime-cilantro rice, topped with delicious Greek yogurt, and drizzled with sumac. The flavors complement each other so well that your family will be asking for more.

Ingredients:
- 2-3 chicken breasts
- 1 cup Greek yogurt
- Mix of spices: 1/8 tsp each paprika, coriander, allspice, sumac, dry basil, salt, pepper, and garlic powder
- 2 bell peppers
- 2 zucchinis
- 1 red onion
- Mix of spices for veggies: 1/8 tsp salt, pepper, paprika, dry basil, dry mint, and garlic powder
- Skewers

For the rice:
- 1 cup rice
- Juice and zest of 1 lime
- Chopped parsley and cilantro
- 1 tsp butter
- Salt

For the sauce:
- 1 cup Greek yogurt
- 1 tsp dry mint
- 1 tsp dry basil

Sumac for serving

Instructions:
1. Cut the chicken breasts in half to make them thinner, then cube them. Mix with yogurt and spices, and marinate in the fridge for 2 hours or more.
2. Cut bell peppers in half, remove seeds, and cut into squares. Slice the zucchinis and red onion to match the size of the peppers. Place all veggies in a bowl and season with spices.
3. Thread skewers with alternating chicken and veggies.
4. Grill the kebabs or roast in a preheated 385°F oven for 25 minutes on a baking sheet, remembering to turn them halfway through.
5. For the rice, wash it well and cook with butter and salt. Once cooked, add lime zest and juice, chopped greens, and mix well.
6. For the sauce, mix all ingredients together.
7. Serve kebabs over rice, drizzle with the sauce, and sprinkle sumac on top.
