The Knife Story:
So every other week or day, I would ask Chef Dominick Lee for a knife. ANY KNIFE! And he would always say "No Blue" or "Whenever I decide to give away any of my knives, I'll let you know". Well last night, he gave me a knife. Not just any knife, one I have had my eye on for about a year now. Gave it to me, in the middle of service, fresh from cutting beef cheek. Right after his last American use. This is one of the best parting gifts I have ever recieved. And to be able to work along side of him and Chef Dawn Burrell at The Butcher's Ball, his last American dinner before he is off to Italy, will forever remain a memory I will cherish.

I have always admired bakers especially Cake Artist. I have always respected their craft. So My Mom wanted a cake for her Birthday do I took on the challenge. French Vanilla cake with Buttercream Frosting. All made from scratch. IDK I'm proud of myself. And I was stacking I heard in my head " Is your Cake leaning"? Me..no..its not.

Never limit yourself to what you can achieve. Pat yourself onnthe back for every achievement big or small.
