West African inspired Fried Green Tomatoes are up on the recipe blog. Link in bio ๐Ÿ’ƒ๐Ÿฝ๐Ÿ•บ๐Ÿฝ. Tomato season has been a blessing and there are so many varieties out there. The green ones are ๐Ÿ’š๐Ÿ’š๐Ÿ’š. We wanted to kick up the heat ๐ŸŒถ, so we seasoned them with Yaji (Suya pepper) mix and we must say the result was ๐Ÿ”ฅ.

West African flavors are complex, deep, smokey, earthy, peppery, hot and so much more. They can be used in cooking just about anything to add complex, deep, smokey, earthy, peppery, hot flavors to your plate. Like this bowl of girasoli in pepper soup broth for example. Despite the fact that itโ€™s hot outside, the heat from this bowl of deliciousness will make you sweat and ultimately cool you down. See how Mother Nature has us sorted?

Have you been seeing a lot of fresh corn in the grocery stores lately? We have. It reminds us that itโ€™s also corn season back home in the Motherland too. Street sellers line the streets with their grills full of corn and local pear (and avocado like fruit), which are eaten together or pots of straight up boiled corn. Are you a corn lover? ๐Ÿ™‹๐Ÿพ๐Ÿ™‹๐Ÿฝโ€โ™€๏ธ

Today back in the Motherland and abroad we are celebrating Liberia๐Ÿ‡ฑ๐Ÿ‡ท. Today marks Liberia's 175th year of Independence. 200 years ago freed slaves from the U.S. arrived in Liberia and 25 years later the country was declared to be independent from the United States.

Liberia, which means โ€œland of the free,โ€ was the first nation on the African continent to gain its independence on July 26, 1847 from the United States of America. Liberia, the oldest democratic republic on the continent of Africa and the only country to have escaped European colonization. ๐Ÿ’ช๐Ÿฝ

The Republic of Liberia began as a settlement of the American Colonization Society (ACS), who believed black people would face better chances for freedom in Africa than in the United States. Between 1822 and 1861, thousands of free blacks were relocated to the settlement at Cape Mesurado on the Pepper Coast of West Africa. In 1824 the colony was named Liberia, and the main settlement was named Monrovia in honor of U.S. President James Monroe, which is the present day capital of Liberia.

Big multinational multi-billion-dollar companies feel they can throw their gravitas around and drown out smaller companies like mine. This has to stop! I own the name and trademark, Ekaterra along with the domain, ekaterra.com. As a result of my use of the EKATERRA mark in commerce before anyone else, I have senior rights to the EKATERRA mark. However, Unilever proceeded to name their tea business โ€˜ekaterraโ€™ and have been squatting on my trade name for the past year, despite knowing about my pre-existing EKATERRA business. They then went ahead and transferred said tea business โ€˜ekaterraโ€™ to CVC Capital Partners for โ‚ฌ4.5 billion when they did not own the mark. How is that possible? In the process of infringing on my mark, they have decided to ignore my legal team for months at a stretch, which is severely hurting my business.

The name Ekaterra for us means Motherland (Africa, and West Africa specifically), which I coined from two words - Eka (meaning mother in Ibibio, the language of my tribe from Southeastern Nigeria) and Terra (the Latin word for earth/land). I created and have been using this name long before Unilever did.

My legal team is doing their work, but I am no longer going to be silent on this and I will not go away because Unilever feels the name ekaterra is more important to them. Unilever may have bigger budgets and bigger teams than I do as a startup founder. They can out-spend me in marketing and PR, or try to drown me in legalese, but the name is mine. I have done all the things that a business should do to protect its trade name.

Unilever has one option; meet with my legal team regarding this blatant infringement.

All across markets in the countries of West Africa, you will find the spice section with traders offering local spices wrapped in tiny plastic bags (let's not talk about the plastic right now). Individual spices that are ground together for specific dishes such as pepper soup spices, banga soup spices, nsala soup spices. You may never have seen some of them before, and the traders may not be able to tell you their local names, let alone their biological names, but they are potent, aromatic, and also medicinal. Deciphering these spices, researching their origins, uses and flavor profiles, while creating access to them and everyday use cases for you, is what keeps us up at night. And guess what? We wouldn't have it any other way. Gbafilo, umilo, Guinea cubeb, sumbala, hwentia, and the list goes on. You deserve to have these in your kitchen, in your cooking pots and on your plates.

African Birdโ€™s Eye Chilis, also known as piri piri chilis or ata wewe in Yoruba, are tiny smoked dried chili peppers that aside from heat offer a light, yet herbaceous flavor. Similar in flavor to the tabasco pepper, these chilis are used to add heat to a variety of dishes in a much less overwhelming way.

Add a few to a grinder with your seasoning mix, add to soups, stews, sauces, dressings. Add a whole chilis to your stir fries and roasts. Pairs well with cilantro, and the West African holy trinity - ginger, garlic and onions.
