This Fourth of July, we had the honor of cooking for a poolside party hosted by some great friends.

Keeping it true to Mambre’s Pecan & Fire BBQ Co., we didn’t overcomplicate it. H-E-B had some great deals on meat, so we kept the menu simple, classic, and crowd-friendly: ribs, beef skirt steak, and chicken quarters.

When you’re feeding 10 or more people, you don’t need an expensive menu—you just need good food, good smoke, and good company.

Sometimes the best barbecue isn’t about competition. It’s about creating memories with the people around the table.
