I’ve been a Miner fan for years.

And for a long time, I was a club member.

But it had been a minute since I opened one of Dave’s Wild Yeast Chardonnays.

Turns out, time has been kind.

After 14 to 16 years in the bottle, it still doesn’t disappoint. Ripe yellow fruit. Medium acid. A long, lingering finish.

Unapologetically California Chardonnay.

And sometimes, that’s exactly what belongs in the glass.

Houston summers are brutal.

And brutal summers demand crisp, refreshing wines.

Sure, Sauvignon Blanc and rosé usually get the spotlight, but don’t overlook Italy’s Gavi.

The 2024 Batasiolo Gavi I had today at Ouisie’s Table was exactly what this weather calls for.

100% Cortese from Piedmont. Bracing acidity, clean finish, and refreshing from the first sip.

Pair it with a blue cheese salad, fish tacos, or simply a poolside afternoon.

Sometimes the best summer bottle is the one you weren’t looking for.

A Tale of Two Cities … or at least two very different Chardonnay geographies.

Santa Lucia Highlands, California vs. Dundee Hills, Oregon.

The 2011 ROAR Chardonnay brought the classic California profile: lush yellow fruit, palate-coating creaminess, and a serious butter bomb finish. Almost too aggressive, but still very much its own experience.

The 2022 Domaine Serene from Dundee Hills sat on the other side of the spectrum: green apple, citrus, bright acid, and a crispness that scraped the palate in the best way.

Same grape. Two regions. Two completely different stories.

And that’s the beauty of wine.

There really isn’t a wrong answer. Drink what you like, tell your favorite sommelier what that is, and let them help you find something new.

Because I need variety in my glass.

Rosé and Sancerre do not usually show up in the same sentence.

Sancerre is known for Sauvignon Blanc, but this 2023 Domaine Girault Sancerre Rosé shows there is more to love from this region.

Made from 100% Pinot Noir, this French rosé is crisp, bright, and balanced with tart strawberry, red fruit, and beautiful acidity. It paired perfectly with Cava’s hot harissa chicken bowl and brought something fresh and unexpected to the table.

2023 Borgo di Castellania Derthona, courtesy of the Francescovini Wine Club in Florence, Italy, straight to my doorstep.

This Christmas will mark my fourth year in the club, and it has yet to disappoint. But enough about the wine club. Let’s talk about the wine.

100% Timorasso, a rare white varietal from the Piedmont region of Italy, often celebrated for its “white Barolo” status. I hadn’t had a Timorasso before, so that alone made this bottle worth opening.

Thankfully, the tasting experience lived up to the excitement.

Tart green fruit, citrus, and an almost floral note on the nose, carrying beautifully onto the palate. Crisp acidity and mineral notes give it the kind of structure that almost begs for cellaring.

I can’t tell you exactly where to find it stateside, but next time you’re in Florence, I’ve got a restaurant you simply should not miss.

There is no such thing as “cooking wine.”

If you wouldn’t drink it, don’t cook with it.

That doesn’t mean it has to be expensive. It just needs to be something you actually enjoy, and something that makes sense with the meal.

If I’m braising short ribs, I’m reaching for the same style I’d want in my glass with dinner. Something with a little weight. A Côtes-du-Rhône would be a beautiful choice. Chianti almost always works. Recipes will usually guide you toward the right style, but the real rule is simple: cook with wine that belongs at the table.

For lamb or pork, I’d lean Pinot Grigio.

But I’d steer clear of those airplane-size bottles of Sutter Home hiding on the grocery store shelf.

And for the love of good food, always taste the bottle before you pour it in the pan.

New this year: Elijah Craig 15-Year Bourbon.

Caramel. Brown butter. Toasted marshmallow on the nose and palate. Scary smooth for 108 proof, with a silky mouthfeel that coats, clings, and lingers exactly the way a good bourbon should.

Not sure yet if this will become an annual offering, but I do know this: if you see one, it is worth your time.

And probably worth not telling too many people about until you’ve secured your bottle.

2023 La Caprichosa Verdejo.

Crisp, full bodied, and just lush enough. The fruit is there, but never overpowering.

If you’ve never taken a Verdejo out for a spin, you’re missing out. It’s easy to drink, incredibly versatile, and exactly the kind of bottle that works just as well on its own as it does with a great meal.

Beautiful by itself on a warm spring Houston day. Even better with Socarrat’s arugula and Iberico ham salad. And absolutely perfect with Chef Reyes’ paella, which is another thing you should not miss when you go visit.

Great wine. Great food. Great reminder that sometimes the simple bottles are the ones that overdeliver.

Tonight’s glass: 2018 Vidal-Fleury Saint-Joseph.

Rhone region. 100% Syrah. Inky in color, intense from the first sip, and full of dark fruit. Blackberry, black cherry, and a dry, almost dusty finish that keeps you coming back.

But give it 20 minutes in the glass, and everything changes. The edges soften. The intensity mellows. The wine opens up.

A good reminder that wine, like most worthwhile things, deserves a little patience. How it starts is not always how it finishes.
