An evening that unfolds like a quiet, deliberate story. One course at a time.
At Sushi Horiuchi, the experience is as intimate as it is extraordinary. With just six seats, every guest becomes part of the performance—watching each movement, each slice, each final touch placed with intention. The 21-course omakase isn’t just a menu—it’s a progression of moments.
It begins delicately with Madai, shiso pesto & smoked hotaru ika with saikyo miso, easing into the warmth of kabura mushi with anago and sakura shrimp, before unfolding into pristine expressions like hirame with caviar and noten maguro with white asparagus.
Then the tempo shifts. Textures crisp and deepen with amadai uroko age & kombu dashi foam, followed by a beautifully balanced trio of kawahagi, sayori, and sakura masu with yuasa soy. Richness builds with Ohmi paired with kegani crab and beurre blanc, a course that quietly lingers.
From there, the sushi sequence becomes the heartbeat of the evening:
Kasugo tai with oboro
Hokkaido hokkigai
Ehime chu toro and O-toro
Hokkaido bafun uni with nori
Sumi ika with salt and lemon

Each piece, presented and placed with precision, feels both fleeting and unforgettable.
The experience closes just as thoughtfully with sawara oshizushi layered with shiso and yuzu, followed by the indulgent simplicity of kichiiji, before transitioning into dessert: musk melon sorbet with citrus sugar crunch, a poetic “Japanese Garden,” and a final, grounding note of Uji Kyoto matcha.
Paired throughout with carefully selected sake, every course is elevated; each sip echoing the flavors on the plate.
