Weekend fun from Homemade Catering!

This morning I woke up to cloudy skies and a little drizzle, and I knew exactly what today's catered lunch needed to be!

On the menu:
Meatloaf
Twice-Baked Potatoes
Mac & Cheese
Dinner Rolls
Caramel Apple Pie

My favorite part....The customer simply said, "We need lunch for 8. You decide what to bring."

I LOVE that! ❤️ There's something so fun about having the freedom to create a menu inspired by the day.

#27 — Mushroom & Leek Bread Pudding!

Oh my gosh, this is SO rich and savory! It's definitely a keeper and has officially earned a spot on my holiday menu!

#26 — Kale & Sweet Potato Salad

Kale topped with Middle Eastern-spiced sweet potato fries, creamy avocado, pomegranate seeds, and a drizzle of lemony tahini dressing.

Definitely a unique combination—but really good! Sweet, savory, creamy, tangy and just a little unexpected.

What a week for Homemade Catering!

This week took me from a large corporate catering job to a few little gatherings.

🏭 375 employees • 3 shifts • 1 manufacturing facility
I started at 12:30 a.m. Thursday and wrapped up around 6:30 p.m. Friday. Was I exhausted? Absolutely. 😂 But I loved every minute of it. There’s something pretty rewarding about seeing all of that planning, prepping and cooking come together.

🥐 This morning was a little change of pace with breakfast goodies for a bridal party getting ready for their big day.

🎶 And tomorrow, I’m finishing out the week with appetizers for a small music concert at Cedar Rock.

Corporate lunches, weddings, celebrations, concerts and everything in between—this week was a pretty good reminder of just how much I love what I get to do!

Pimento cheese-stuffed chicken breast with honey corn and warm buttermilk biscuits. A Southern delight!

Twenty-five new recipes this year and counting. This one is definitely going on the make-again list.
