This recipe calls for Fresh “Big Red” peaches grown in Inman by Bruce Johnson of Johnson Bros. Peach Farm.
Big Red is a very sweet, late-season peach with a hint of red. Besides being a pretty peach, it's delicious. (I drive six hours each way to get them fresh.) Get to know your local peach farmer or farmers' market vendor, who will have beautiful, vine-ripened peaches from your area, and set them on the kitchen counter to finish ripening.
Serves 4-6. Cooking, prep and freezing time: 75-80 minutes.
1½ cups whole milk
1½ cups heavy cream
1/8 teaspoon salt
1 cup + a tablespoon sugar
Peelings and pits from 3 very ripe Big Red Peaches
3 Big Red peaches
1 fresh lemon (preferably Meyer)
2 teaspoons pure vanilla extract
1 to 2 tablespoons peach brandy
8 egg yolks
Coarsely chop the 3 ripe peaches and place them in a blender. Immediately squeeze the juice of half a fresh lemon over the peaches, pulse until the peaches are coarsely chopped (reserve the remaining half lemon for the following day).
Heat milk, cream, salt, sugar and peach pits and peelings until the mixture has tiny bubbles around the edge of the sauce pan. Cover and let set for 20 minutes. Remove and discard the peelings and pits from the hot mixture.
Add 1 cup of the hot milk to the chopped peaches and lemon juice and puree until smooth. Slowly pour the pureed peaches and milk mixture back in with the remaining hot milk and cream, stirring as you pour. Add 8 egg yolks to a glass bowl and whisk until pale yellow. Slowly drizzle 2 cups of the hot pureed peach, milk and cream to the egg yolks, whisking constantly, then slowly drizzle the tempered egg yolks and milk back into the remaining hot milk and cream until mixed thoroughly.
Turn on low heat and stir constantly until the mixture begins to thicken and coats the back of a wooden spoon. Do not walk away from the stove or stop stirring until the custard is cooked and coats the wooden spoon. Remove custard from heat and let cool.
Strain the mixture into a glass bowl, pressing any bits of peach through the strainer. Add pure vanilla extract, cover and let set overnight.
The following day, add the custard mix to an ice cream or gelato maker and freeze until it begins to get firm. Peel 3 more Big Red peaches, chop coarsely and spoon peach brandy over the peaches. Squeeze the remaining half lemon over the peaches and add to the ice cream maker.
Freeze only long enough to incorporate and chill the peaches. The brandy will help keep the peaches from over freezing and forming ice crystals. Place in freezer. Prior to serving, allow the ice cream to soften.
Wine pairing: Serve with lightly chilled Chateau Montelena Potter Valley Riesling.
