Condor's Ruin-Pyramid shaped, ash rind mold ripened with clean, mineral quality
Garret's Ferry- Crotin Shaped, geotrichum rind, notes of honeysuckle
Rivertown-Reblechon-y disks, slightly stronger with earthier mushroom flavors, but lots of luscious butterfat.
