What is the best way to make mashed potatoes? I put that to the test today! ⬇️

It is often debated what the best way to make mashed potatoes is, with a ricer or with a fine mesh strainer…..let’s find out!

Ricer Method:
Pros:
* Much easier to use since the holes are larger.
* Much faster to use, 60% faster.
* Easier to clean.
Cons:
* Slightly larger potato pieces.
* Once mixed can leave very tiny lumps, but are almost imperceptible.

Strainer Method:
Pros:
* Makes the smoothest potatoes.
* Zero Lumps.
* Very easy to mix once this part is done.
Cons:
* Much more difficult to pass the potatoes through since the holes are tiny.
* Takes much longer, 60% longer.
* Hurts your wrist!!!

So which would you choose??

How to make the perfect holiday stew - beef bourguignon!

How to make Lyonnaise Potatoes!

Ingredients:
1. 1 lb small gold potatoes, thinly sliced
2. 1 onion, julienned
3. 4 tbsp duck fat or clarified butter
4. Salt and pepper to taste
5. 2 tbsp fresh thyme, minced

Instructions:
1. Bring a pot of water to a boil. Add a generous amount of salt, so it is salty but not as salty as the ocean. Boil the potatoes for 3-5 minutes, or until slightly tender. Drain and set aside.
2. While the potatoes are boiling, heat 1 Tbsp of clarified butter in a large stainless steel pan over medium heat. Add the onions and caramelize them, stirring occasionally with a wooden spoon. This will take 20-30 minutes. Deglaze with water as needed if dark brown spots form on the pan. Turn the heat to low midway through cooking. Add salt towards the end once the onions are caramelized. Turn off the heat and remove the onions.
3. In a cast iron or nonstick pan over medium heat, add 3 Tbsp of clarified butter. Once warm, add the potatoes and stir occasionally, allowing them to get golden brown on each side, which takes roughly 10-15 minutes. Once golden, add the caramelized onions, thyme, and pepper. Taste for salt and season accordingly.
4. Serve and enjoy!

How to make broccoli cheddar soup 🥦

Ingredients:

* 4 tbsp butter or oil
* 1 onion, diced
* salt and pepper to taste
* 6 garlic cloves, minced
* 1/4 cup gluten free 1-1 flour, or all purpose flour
* 2 cups whole milk
* 2 cups chicken stock
* 3 cups broccoli florets
* 2 carrots, shredded
* 1/2 lemon, juiced
* 8 oz shredded cheddar cheese
