My mentor used to say:

“Great wine is made in the vineyard, not in the winery.”

Many people imagine winemaking as a kind of magic, where the winemaker is in the cellar adding ingredients to transform a wine into something great.

The reality is very different.

A great winemaker’s job is not to manipulate wine, but to understand every stage of its journey—from the vineyard to fermentation—so they can guide natural processes with as little intervention as possible.

The healthier the vineyard, the less the winemaker needs to do.

That’s why the world’s greatest wines are born from exceptional vineyards, unique soils, and the conditions nature provides each vintage.

The winemaker’s role is to preserve that expression, not replace it.
