Crispy Homemade Plantain Chips Recipe
Ingredients & Preparation Items
Plantains: 3 ripe plantains and 3 unripe (green) plantains.
Cooking Oil: For deep frying.
Soaking Solution: Water mixed with salt and a splash of vinegar or turmeric (for soaking sliced plantains).
Tools: Slicer (mandoline), bowls for soaking, a colander to drain, a frying pan or skillet, and a slotted spoon.
Step-by-Step Instructions
Peel and Slice:
Peel both the ripe and unripe plantains.
Using an antique-style mandoline slicer, carefully slice the plantains into thin, uniform rounds directly into a bowl.
Soak the Slices:
Submerge the plantain slices in a bowl of salted water. This removes excess surface starch and helps achieve an extra-crispy texture when fried.
Let them soak for about 10–15 minutes, then transfer them to a colander to thoroughly drain the excess water.
Fry to Golden Perfection:
Heat cooking oil in a deep frying pan or skillet over medium-high heat.
Carefully drop the drained plantain slices into the hot oil in single batches, stirring occasionally with a slotted spoon so they fry evenly without sticking.
Fry until they turn a vibrant golden brown and become crisp.
Drain and Cool:
Remove the chips from the hot oil using a slotted spoon.
Place them on a plate lined with an absorbent linen napkin or paper towel to drain any remaining oil.
Serve:
Transfer the finished chips into an elegant fine bone china bowl or serving dish. Enjoy immediately or store in an airtight container once completely cooled!
