2 cups pecans, finely chopped
1 1/2 cups self-rising flour
1 cup granulated sugar
1 cup brown sugar
1 cup vegetable oil
4 large eggs, beaten
1 teaspoon vanilla extract
1/4 teaspoon salt
1 teaspoon ground cinnamon
Instructions:
Preparation: Preheat your oven to 350°F (175°C) and grease a loaf pan.
Cooking: In a large mixing bowl, combine the granulated sugar, brown sugar, and vegetable oil. Mix until well blended. Add the beaten eggs and vanilla extract, stirring until smooth. Gradually incorporate the self-rising flour, salt, and ground cinnamon, mixing until just combined. Finally, fold in the chopped pecans.
