Just threw together the most incredible little coffee cake from scratch ✨
Nutmeg-spiced batter made with oat milk, eggs, a touch of sour cream, and butter for richness… then topped it with pecans and a crunchy chocolate sea salt granola “streusel” that honestly took it to another level.
It baked into this soft, moist, slightly dense cake with a warm spice flavor and the perfect sweet-salty crunch on top. Rustic, cozy, and completely accidental perfection 🍰🌰🤎
My roommate asked what I was whipping up, and when I told her, her eyes got BIG… next thing I know she said she needs coffee 😆
