So so yummy

This Mexican Atole is thick, creamy, and full of warm cinnamon, piloncillo, and vanilla. The coziest drink for winter mornings and holiday nights.

Exciting updates my friends:
Truly wanna thank each and every one of you that have supported me as I began my journey as a traveling chef. That chapter has closed and a new chapter has begun.

I have to make a new page for my new business, considering this page will not allow me to change the name. I’ll still be posting here, but I hope to have you as a follower on my new page!

I’m super excited—and a little nervous—all at once for what’s yet to come in this next great adventure. My adventurous life has officially begun! 🌿

I’m transitioning in my culinary journey. While I’m still passionate about the kitchen, my focus is shifting from cooking meals to creating wonderful herbal blends, teas, and specialty items for mercantiles. I’ll be mixing herbs, steeping them, and putting together unique goodies that bring joy and wellness to others.

I’m still planning to travel—waiting to see if the winter contract comes through, and if not, I’ll be looking at a summer contract. My leg is healing beautifully, and just two days ago I walked without a cane or any assistance! I even shared a little video of that milestone, and I’m so grateful for the progress I’ve made.

Though I’m stepping into a different role in the culinary world, I’m excited for this new chapter and the creative opportunities it brings. Here’s to growth, healing, and new beginnings! 🌿✨

Peanut Butter No-Bake Cookies (Small Batch for 2 People)

Ingredients

¼ cup + 2 tbsp granulated sugar (6 tbsp total)

2 tbsp butter

2 tbsp milk

1 tbsp unsweetened cocoa powder

3 tbsp peanut butter

½ cup quick oats

1–2 tbsp chopped peanuts (optional)

¼ teaspoon vanilla extract

Instructions

1. Line a small plate or tray with wax paper or foil.

2. In a small saucepan, combine sugar, butter, milk, and cocoa.

3. Cook over medium heat, stirring constantly, until it reaches a rolling boil.

4. Remove from heat and let it cool 1 minute.

5. Stir in the peanut butter until smooth.

6. Add the oats, peanuts, and vanilla, mixing well.

7. Quickly drop by spoonfuls onto your prepared surface.

8. Let them cool completely — they’ll firm up as they sit.

🍪🍪🍪🍪🍪🍪🍪🍪🍪🍪🍪🍪🍪🍪🍪🍪🍪🍪

If you want them extra fudgy, add a tiny bit more peanut butter. If you want them firmer, add a sprinkle more oats.
