🤠 Cowboy Pasta Salad 🍝🌽
Bold, colorful, and packed with flavor!
If you’re looking for a pasta salad that stands out, this is it! Loaded with juicy seasoned beef, fresh veggies, black beans, and a zesty taco-lime dressing — it’s the perfect crowd-pleaser for BBQs, picnics, or quick dinners. 🌶️💛
🥩 Ingredients
300g pasta (any short shape like penne or rotini)
1 tbsp olive oil
400g ground beef
1 small onion, chopped
Salt & black pepper to taste
1 cup corn kernels 🌽
1 cup black beans (rinsed & drained)
1 cup cherry tomatoes, halved 🍅
1 cup shredded cheddar cheese 🧀
1 bell pepper (red or yellow), diced
1 jalapeño or green chili, chopped (optional 🌶️)
2 green onions, sliced
🍋 Dressing
¼ cup olive oil
Juice of 1 large lime 🍈
1 tbsp taco seasoning
Optional: 1 tsp honey for a hint of sweetness
👉 Whisk all dressing ingredients together until smooth and well blended.
👩🍳 Instructions
1️⃣ In a skillet, cook ground beef and chopped onion over medium heat until browned.
Drain excess fat and season with salt and pepper. Let cool slightly.
2️⃣ Cook pasta according to package directions. Drain and toss with olive oil to prevent sticking. Let cool.
3️⃣ In a large bowl, combine the cooled pasta, cooked beef, corn, beans, tomatoes, peppers, and cheese.
4️⃣ Pour the dressing over and toss well until everything is evenly coated.
5️⃣ Chill for at least 30 minutes before serving — this helps the flavors blend beautifully.
