Okay, plant friends, I have chaya cuttings to share with you!!! I have four distinct types growing here at Pike Food Forest: Chayamansa, Redonda, Estrella, and Picuda. My Redonda has two leaf forms: Maple Leaf and Jumbo Leaf. All are delicious!!🤤

Chaya is a beautiful, productive leafy green. It’s often grown as an ornamental, because the flowers bring butterflies and other pollinators to the garden.

Nutritionally, chaya is a powerhouse. Just remember to boil the leaves uncovered for 15 to 20 minutes in a well ventilated space.

I have lá lốt for you! Also known as wild betel leaf, it loves shade and moist soil, and its leaves add a smoky, peppery flavor to wraps and curries. It makes a lovely groundcover, just give it room. I loves to spread.

Join us for a family-friendly, 10-day, 72-hour Permaculture Design Course at Pike Food Forest. Learn hands-on in a living 2-acre food forest with daily site tours and on-site tastings.

Beautyberry pie!!! 💜🌿

Tastes like classic Florida in fall to me! It’s my 4th year making this. Beautyberries are naturally rich in colorful anthocyanins and other polyphenols! I love connecting foraging, food forest education, and cooking into one memorable dish.

Beautyberry Pie Recipe (one standard 9-inch pie)

Crust
Equal parts dates and almonds, blended until sticky and pressed firmly into a pie dish.

Filling
8 cups ripe beautyberries
5–6 cups water
⅔ cup sugar (or more to taste)
2 tsp agar powder
1 Tbsp lemon juice

Simmer the washed beautyberries in the water for about 20 minutes, gently crushing them as they cook. Strain through cheesecloth and measure out 4 cups of beautyberry juice.

Return the juice to the pot. Whisk in the sugar and agar, bring to a boil, and cook for about 1–2 minutes, stirring until the agar is completely dissolved. Remove from heat and stir in the lemon juice.

Pour into the date and almond crust. Allow to cool, then refrigerate until completely set.

The result is a lightly sweet, floral-tasting, jewel-colored dessert featuring native Florida. 💜

Mushroom hunting at Pike Food Forest! 🍄‍🟫🍄🤓 We’re so grateful to our 4H member, Seven for teaching us about wood ear mushrooms. We found a ton! Next up is making soup while the kids learn about foraging and the fungal layer of a food forest. 🌿🥣
