Long time no see 🤭
So if you didn’t know, I’m a third semester RN student & the semester kicked off with a BANG. Between studying, class, homework, clinical, working & trying to stay sane… this page became the least of my priorities 😅
BUT I haven’t stopped cooking for my husband almost every single night. That being said… this weeks menu is full of flavor while also prioritizing low carb & high protein. 💪🏼

Saturday- pozole at my in-laws 🤤🇲🇽
Sunday- national margarita day! Double date with our besties 🍹🌮
Monday- grilled bang bang shrimp tacos 🍤🌮
Tuesday- chipotle steak bowls at home 🥩🍚
Wednesday- keto patty melts 🍔
Thursday- egg roll in a bowl 🥡🥢
Friday- Tuscan lemon orzo with chicken thighs 🍋

Tonight’s dinner: pan seared pork chops, roasted parmesan broccoli & air-fried baked potato 🤤

Recipe:
1. Pre-heat your air fryer to 400 degrees. While that’s warming up, wash & dry your potatoes. Once dried, stab with a fork all over the potato. Drizzle olive oil on top & rub it all over the potatoes. Sprinkle with sea salt & season on all sides. Pop them into the air fryer at 400 degrees for roughly 40 minutes, flip halfway through.
2. When the potatoes have 20 minutes left, start on your broccoli. Put your frozen broccoli on a sheet pan & season with whatever makes your heart happy! I use Gibsons seasoning salt & black pepper. Toss with a drizzle of olive oil & top with as much parmesan cheese as you like! Cook at 425 for about 10 minutes, or until the cheese is starting to crisp.
3. After you pop the broccoli in the oven, start your pork chops. I season mine with Gibsons & a little bit of bbq rub from our new favorite bbq place in North Kansas City. Heat a little drizzle of olive oil & cook on medium heat until there’s a nice crust on each side. When your chops are almost done, add a little drizzle of hot honey & flip on each side to add a nice coating. (Obviously optional, but it added a great taste!)
Add your favorite toppings to your potatoes & enjoy 😋

Tonight’s dinner: chili

Recipe:
1. Dice half of a yellow onion. In a pot (I use my Dutch oven), heat a drizzle of olive oil & cook onions until translucent, about 2-3 minutes. Stir frequently to avoid burning.
2. Season your onions with salt & pepper (I use Gibsons seasoning salt). Add 1/2 can of diced green chiles & 1 tbsp of garlic & stir. Cook on medium heat for about 3 minutes.
3. Add in your ground beef, season with Gibsons seasoning salt, onion powder, garlic powder, chili powder, paprika, McCormicks steak seasoning & a few dashes of Worcestershire sauce. Cook until your meats done. Use a paper towel to collect any excess grease in your pot.
4. Once meats done, add in your chili beans, tomato sauce & fire roasted diced tomatoes. Fill the can of tomato sauce half way with water & add that to the pot. Add a few more dashes of Worcestershire sauce & a few of the hot sauce of your choice. I added a little bit more chili powder, but you can taste & season as you go!
5. Put on medium-high heat until bubbles start to form, then place a lid on the pot & lower the heat. Cook on low for about a hour, stir a few times to make sure nothing sticks to the bottom.
6. Top with the toppings of your choice! I do cheddar cheese & my husband adds raw onion & more hot sauce to his.
7. Turn on a football game & enjoy 🏈🤪

Hi everyone! Sorry for the late update, I had a dental procedure today & completely forgot to document tonights dinner 😅oops. It was cajun andouille sausage pasta with a homemade alfredo(ish) cream sauce. Honestly, I just kinda eye-balled everything and through random things together, no complains from the husband, so it turned out alright 🤣

I've been working on next week's dinner menu & our household is doing our best to go low carb/sugar and high protein. Here's what we've come up with!

Friday- "girl dinner" (my husband works during the day and I work at night, I usually bring some deli meat and cheese, or an uncrustable while he eats leftovers or picks something up on his way home)
Saturday- Bears/Packers game potluck at our friends house! I'm making little smokies and a rotel cheese dip
Sunday- Chili (since we had our nieces birthday last week, we moved chili to this week)
Monday- pan seared pork chops with baked potato and parmesan roasted broccoli
Tuesday- blackened air fryer salmon with a lemon garlic glaze, parmesan roasted broccoli and potatoes
Wednesday- Big Mac salad
Thursday- Birria tacos
Friday- air fryer garlic parmesan chicken thighs with a side salad & homemade croutons
Saturday- "girl dinner"

Hopefully this page helps everyone with the million dollar question of "what's for dinner tonight?"! Staying organized is my top priority (I might literally go insane if I don't have dinners planned for the week lol) and I reserve Fridays or Saturdays for grocery shopping. Having a set schedule also helps keep me organized and not only benefits my mental health, but my wallet & my husbands sanity for keeping me sane 🤣

Tonight’s dinner: NY strip, mashed potatoes & roasted parmesan broccoli

Recipe:
1. Season steaks on both sides with salt, pepper & McCormicks steak seasoning. Set aside.
2. Peel, wash & largely dice potatoes (I used 2 large & 2 small potatoes). Boil until fork tender.
3. On a small sheet pan, add your frozen broccoli with a drizzle of olive oil, Gibsons seasoning salt & a sprinkle of parmesan cheese. Roast in oven at 350 degrees for about 8-10 minutes, or until cheese is turning a golden brown.
4. While potatoes & broccoli cook, heat a drizzle of olive oil in a medium pan. Add steaks once pan is hot. Cook on both sides for about 2-3 minutes each, and cook until your liking (medium rare temp is 130-135).
5. When almost done, add about 2 tablespoons of garlic & herb butter to the pan. Put a small amount of butter on top of the steaks and let it melt. When steaks are 125 degrees, turn off heat & let the steaks rest in the pan. This allows the steaks to reabsorb all of the juices 🤤
6. When potatoes are fork tender, strain & add back to the pot. I eyeball these measurements, just taste as you go! I used about 1/2 stick of butter & about 1/3 cup of heavy cream, salt & pepper. Using a hand mixer, beat on low until smooth. Add more butter or cream if needed. Taste as you go & season as you go!

Tonight’s dinner: egg roll in a bowl 🍚

Recipe:
1. Clean your rice until water runs clear (I used 1.5 cups of rice in my rice cooker).
2. While your rice is cooking, heat 1-1.5tbsp of olive oil with a splash of sesame oil in a pan at medium heat.
3. Chop 2 green onions separating the greens & whites. Sauté on medium heat, stirring frequently to prevent burning.
4. Add about 1 tbsp of minced garlic and about 1/2 tbsp of ginger paste to the pan, stirring frequently for 1-2 minutes.
5. Add in the lean ground chicken and season with your preferred (I use Gibsons seasoning salt and crushed red pepper). Cook until slightly browned & cooked through then add a splash of soy sauce & 2 tbsp of stir fry sauce, stir until incorporated.
6. Turn heat to low and add 1/2 bag of the coleslaw mix. Stir in with the chicken, then cover with a lid for about 5-7 minutes, until coleslaw mixture is tender.
7. In a bowl, add your rice & then egg roll mixture. I topped mine with wonton strips, green onions & some yum yum sauce!

Today’s dinner: jalapeño popper chicken
Recipe-
1. Preheat oven to 425 degrees
2. Chop 6 pieces of bacon & cook in a pan on medium heat until done (some people like it crisp, some don’t. I cook mine until the bacon is just starting to crisp)
3. In a bowl, mix together your softened block of cream cheese, about 1/2 cup of shredded cheddar cheese, cooked bacon, one diced jalapeño (it was pretty spicy so I only went with one), and your seasonings (about 1-2tsp of each)
4. Butterfly your chicken breasts and season both sides
5. Split your cream cheese mixture in half and evenly fill both chicken breasts
6. Cook at 425 degrees for about 25 minutes, time varies depending on your oven (chicken needs to be cooked until 165 degrees at the thickest part)
7. While chickens in the oven, start on your rice. I use my rice cooker & will never do anything else! WASH YOUR RICE UNTIL THE WATER RUNS CLEAR!
8. Measured 1.5 cups of rice and filled the rice cooker to the correct mark (this depends on your cooker). It automatically turns off when done, then I added about 1 tbsp of butter & a dash of salt.

That’s all! Took about 35-40 minutes total between prep and cook time. This reheats well & perfect night shift dinner!

This weeks menu!

Saturday- jalapeño popper chicken with rice
{2 chicken breast, 2-3 jalapeños (depending on spice preference), 6-8 pieces of bacon, 1 block of cream cheese, however much shredded cheese your heart desires, whichever rice you prefer}

Sunday- dinner at a friends house

Monday- egg roll in a bowl over rice
{1lb ground chicken, soy sauce, hoisin sauce, onion, ginger, garlic, tri-color coleslaw mix, green onion, wonton strips, whichever rice you prefer}

Tuesday- beef chili with grilled cheese
{1lb ground beef, red chili beans, tomato sauce, fire roasted tomatoes with green chilis, onion, tomato sauce, bread, sliced cheese, crackers}

Wednesday- New York strips with mashed potatoes & roasted broccoli
{NY strip, russet potatoes, heavy cream, butter, frozen broccoli}

Thursday- Cajun sausage pasta
{andouille sausage, red bell pepper, heavy cream, Cajun seasoning, fettuccine pasta, Parmesan cheese, tomato paste}

Friday- “girl dinner” 🤣🤭 meaning my husband works 7am-7pm, I work 7pm-7am… he’ll probably eat leftovers & I’ll bring stuff to snack on while at work.

We have most of the ingredients at home already (sauces, butter, cheese, seasonings) & we buy our meat in bulk at Costco to help save costs.

Grocery breakdown shopping at Walmart:
32oz heavy cream- $5.28
5lb bag of russet potatoes- $2.94
Fresh green onion- $1.97
Tri-color coleslaw mix- $1.94
3lb bag of yellow onions- $2.54
1lb lean ground chicken (92%)- $3.84
Cajun style andouille sausage- $3.76
NY strip (pack of 2)- $24.10
12oz bacon- $4.24
Wonton strips salad topping- $1.66
Fire roasted tomatoes with green chiles- $0.98
8oz can of tomato sauce- $0.48

I usually do a Walmart grocery delivery or pick up, not just for convenience but it takes away the “death stroll” through the store. This helps save money, time & mostly your sanity 🤣

Hi everyone!
As many of you know, I LOVE to cook. I randomly post pictures of the dinners I make, & I always get comments to make my own cookbook.
I recently made my 2026 bingo card & one thing I wanted to do was make my own page for sharing recipes & grocery lists. Sooooo here we are 🤣

One thing about me, is I LOVEEEEEEE to have my week planned out. Around the end of every week, I make the next week’s dinner plans so I know exactly what I need. This helps with the super annoying question of “what’s for dinner tonight?”, sticking to a budget, scrambling around to find something to cook or just saying “f it” & eat out. It adds a little bit of control to life, & it’s a huge life saver!

Every Friday or Saturday, I plan to post my next weeks dinner plans, cost breakdown & grocery lists. Then the day that I make those recipes, I’ll share pictures & the recipe I use.
