SO MUCH YUK!!
A quick and easy way to provide needed nourishment when sick is broth. Any beef or chicken bones make excellent broth and you can freeze for whenever needed.

But if you're sick NOW try this:

Cut a medium or 2 small onions (any onion - white, yellow or red) into quarters or eights. Use ALL the parts - skin, root, flesh. Add to stock pot with 4 cups of water. Bring to boil, cover and simmer for 30 min. Strain. Add a little salt and butter (ghee or coconut oil for dairy free) to help with taste and digestibility. If the greasy feel in your mouth is not palatable run thru a blender for 30 - 60 sec. This will keep in refrigerator for 3-4 days.
Onions are rich in antibacterial, antiviral and anti-inflammatory properties which fight infection.
Helpful additions if you have -
* Garlic - whole bulb - cut in half, skin and all
* Ginger - Fresh 2-3 " piece chopped or 1/2 - 1 teaspoon powdered - this will help with taste of the onions.
* Thyme and/or oregano - 1/2 - 1 teaspoon
Add all or any to stock pot and continue as above.

Eat REAL, GOOD food !
We finally got our fall crop planted in the high tunnel: broccoli, several types of cabbage, brussel sprouts and hopefully some cauliflower - there were some unmarked pots 😏
This is later than last year so we will see how they do. If you remember last year our deformed broccoli plants turned out to be beautiful cauliflower. Wonder what surprises there will be this year. Always learning !!

I’m not interested in arguing about why, but our seasonal climates are changing.

I speak with people across the whole US and the one thing we can always connect on is the weather and how different it has been in the past few years regardless of the location. Abnormal is the new normal.

The first USDA Plant Hardiness Zone Map was created in 1960 and updated in 1990 and 2012 as technology and time allowed for additional info. The latest update in November of 2023 shifted many areas half zone warmer. Wichita was previously in Zone 6b is now considered 7a.

What does that have to do with me? Well, I am a gardner, so a lot! But what about for the non-gardener (this should be NOONE in the room, but that's a conversation for another day)?

I bet you wonder what this winter will be like for the cold and flu season!

Regardless of what it will be, we can be proactive. Although our Elderberry Syrup is an awesome addition to your winter routine, it can only support the immune system you have.
When it comes to supporting all our bodies systems (immune and otherwise), diet is the most influential factor, but it’s also a factor we can control very easily (unlike the weather from day to day)! Whether you eat Keto, Paleo, Whole Plant, Carnivore etc simple changes can make a huge difference.

Along with our daily sticky notes or other reminders that help us focus on a spiritual disciplines, add some of the following and work to improve the areas of your physical life where you do less well than the others:

Our kunekune pigs are known best for their flavor-packed, deep red pork.
Here is our favorite Kunekune pork chop recipe that you are bound to fall in love with!

Ingredients for Chops:
-4 Kunekune Pork Chops
-3 tbsp butter
-5 cloves garlic, minced

Ingredients for Garlic Butter:
-1 1/2 tbsp butter, melted
-1/4 tsp garlic powder
-1/8 tsp red pepper flakes
-1/4 tsp parsley flakes

1. Take your pork chops out of the freezer the night before and place them in the frig.
2. The next morning, take them out and salt/pepper them to taste (we enjoy a local seasoned salt) and Worcestershire sauce.
We understand steps one and two are not always possible with busy schedules. If that is the case, pull them out 30 minutes ahead to thaw - using the microwave defrost or a bowl of warm water for the package. Then season with salt/pepper and Worcestershire sauce.
3. Once ready, set oven to 360 degrees F and start warming a cast-iron skillet over high heat on the stove.
4. When the cast-iron is warm, add the butter. After the butter melts, add garlic.
5. Once the garlic is aromatic, sear the chops without moving them until a brown crust forms on the bottom and they easily release from the pan.
6. Flip the chops and sear the other side. (Each side will roughly take 1-2 minutes.)
7. Immediately take the pan off the heat and place it in the oven.
8. Bake for 2-6 minutes - depending on how done you want them to get. Pork chops are safe after they reach an internal temperature of 140 degrees. We recommend removing them soon after they reach 140 so you don’t dry them out.
9. Remove chops from cast-iron and place them on a plate. They should sit for 5-10 minutes before serving.
10. While waiting for chops to rest, melt butter then mix in the garlic powder, red pepper flakes, and parsley flakes.
11. Glaze pork chops with delicious garlic butter then enjoy!
