Thin sliced potatoes baked in rich cream with layers of melted cheese that turn golden and bubbly in the oven. Warm savory and incredibly comforting with deep flavor in every bite.

👩‍🍳 Four Cheese Scalloped Potatoes

⅓ cup shredded mozzarella cheese
⅓ cup shredded Asiago cheese
⅓ cup shredded raclette or Comté cheese
2 cups heavy cream
¼ cup grated Parmesan cheese
2 lb russet potatoes, peeled and sliced ⅛ inch thick
1½ tbsp unsalted butter, cut into pieces, plus more for brushing
½ clove garlic
Salt, to taste
Black pepper, to taste
¼ tsp freshly grated nutmeg
4 fresh bay leaves

Preheat the oven to 425°F with the rack in the upper third of the oven. Generously brush a large ovenproof skillet with butter, then rub the inside with the cut garlic clove. Combine the mozzarella, Asiago, and raclette cheeses in a small bowl. Arrange half of the potatoes evenly in the skillet and season with salt and pepper. Scatter half of the butter pieces and half of the cheese mixture over the potatoes. Layer the remaining potatoes on top and season again with salt and pepper. Pour in the heavy cream, sprinkle with nutmeg, and add the bay leaves. Bring to a gentle simmer and cook for about 3 minutes. Dot with the remaining butter. Sprinkle the Parmesan and remaining cheese mixture evenly over the top. Bake for about 25 minutes, until the potatoes are tender and the top is bubbling and golden brown. Let rest for 5 minutes before serving and remove the bay leaves.

Rich fudgy brownie dough baked right beside soft chewy chocolate chip cookie dough for the ultimate brookie that gives you two perfect textures in every bite.

🧑‍🍳The Brookie

Brownie Cookies
1 ¼ cups all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
⅓ cup (5 ½ tablespoons) unsalted butter
2 oz unsweetened chocolate, chopped
1 cup granulated sugar
2 eggs
1 teaspoon pure vanilla extract

Chocolate Chip Cookies
1 ¼ cups granulated sugar
1 ¼ cups brown sugar
1 ½ cups butter or margarine, softened
3 teaspoons pure vanilla extract
3 eggs
4 ¼ cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
2 cups semisweet chocolate chips

Preheat the oven to 350°F and line cookie sheets with parchment paper.
For the brownie cookie dough, combine flour, baking powder, and salt in a small bowl and set aside. In a large microwave-safe bowl, melt the butter and chocolate in 30-second intervals, stirring in between until smooth. Stir in the sugar, eggs, and vanilla. Add the flour mixture and mix until blended. The batter may look thin but will thicken while resting.
For the chocolate chip cookie dough, cream the sugars and butter in a stand mixer until fluffy. Mix in the vanilla and eggs. Slowly add the flour, baking soda, and salt until combined, then fold in the chocolate chips.
On the prepared sheets, place small scoops of chocolate chip cookie dough, about 12 per sheet. Next to each scoop, add a scoop of brownie cookie dough. Pinch the two doughs together slightly so they touch. Bake for 8–10 minutes, until the edges are golden. Allow to cool on the pan for 5 minutes before transferring to a wire rack.
