Chocolate Covered PB Blended Overnight Oats
Makes 2 servings
1/2 cup old-fashioned rolled oats
1/4 cup PB2 vanilla peanut protein powder
1 Tbsp. chia seeds
1 1/4 cup almond milk
1 Tbsp. peanut butter
1 tsp. vanilla extract
Chocolate Frosting
1/4 cup dark chocolate chips
3 Tbsp. low sugar vanilla or coconut yogurt
1. In a blender, add in oats, protein powder, chia seeds, almond milk, peanut butter, vanilla extract. Blend until smooth and creamy, about 30-60 seconds.
2. Pour batter into a medium bowl. Cover and refrigerate for a minimum of 4 hours or overnight.
3. When ready to serve, melt chocolate chips in a bowl in 30-second intervals. Stir in yogurt until smooth. If this hardens, microwave it for 10-15 seconds.
4. Spread chocolate mixture over your blended oats. This can be tricky, but try to evenly distribute it in the oats mixture.
