Air Fryer Scotch Eggs recipe—no deep frying needed 🥚✨
Ingredients (makes 4)
4 large eggs
½ lb sausage meat (breakfast or pork sausage, casings removed)
½ tsp garlic powder
½ tsp onion powder
½ tsp paprika
Salt & pepper, to taste
½ cup all-purpose flour
1 large egg, beaten
¾ cup breadcrumbs or panko
Cooking spray or olive oil spray
Instructions
1. Cook the Eggs
Bring a pot of water to a boil.
Gently add eggs and boil:
6 minutes for soft center
7–8 minutes for jammy
9–10 minutes for fully set
Transfer to ice water, cool, and peel carefully.
2. Prepare Sausage
In a bowl, mix sausage with garlic powder, onion powder, paprika, salt & pepper.
Divide sausage into 4 equal portions.
3. Assemble
Flatten one sausage portion into a thin patty.
Wrap sausage evenly around one egg, sealing completely.
Repeat with remaining eggs.
4. Breading
Roll each wrapped egg in:
Flour
Beaten egg
Breadcrumbs (press gently to adhere)
5. Air Fry
Preheat air fryer to 380°F (193°C).
Lightly spray Scotch eggs with oil.
Air fry 12–15 minutes, turning halfway, until golden brown and sausage reaches 160°F (71°C).

Mediterranean Tuna Pasta Salad 😋
Fresh, filling, and perfect for a healthy lunch or easy dinner 💚
🧺 Ingredients
Fusilli pasta (cooked) 🍝
Tuna (canned, drained) 🐟
Chickpeas (cooked) 🌰
Cucumber (diced) 🥒
Red & yellow bell peppers (chopped) 🌶️
Red onion (thinly sliced) 🧅
Green & black olives 🫒
Fresh parsley (chopped) 🌿

Cook pasta according to package instructions, drain and cool 🍝

Sliced Baked Potatoes
Ingredients
4 medium russet potatoes
3 tbsp olive oil or melted butter
1 tsp garlic powder
1 tsp salt
½ tsp black pepper
Optional: shredded cheese, chopped herbs, bacon bits
Preparation
Preheat oven to 400°F (200°C).
Wash and thinly slice potatoes (not all the way through — keep the base intact).
Brush with oil or butter, getting between the slices.
Season with garlic powder, salt, and pepper.
Place on a baking sheet and bake for 45–55 minutes, until crispy and tender.

Preparation:

Spicy Thai Crying Tiger Beef with Nam Jim Jaew Dipping Sauce
Ingredients:
1 lb (450 g) flank steak, sirloin, or skirt steak, sliced into thin strips
2 tbsp vegetable oil
Salt & freshly ground black pepper, to taste
Marinade:
2 tbsp fish sauce
1 tbsp soy sauce
1 tbsp brown sugar or palm sugar
2 tbsp lime juice
2 cloves garlic, minced
1–2 Thai bird’s eye chilies, finely chopped (adjust heat)
Nam Jim Jaew Dipping Sauce:
1 tbsp fish sauce
1 tbsp lime juice
1 tbsp brown sugar
1 tbsp chopped Thai chilies (or chili flakes)
1 tbsp minced shallot
2 tbsp chopped fresh cilantro/coriander
1–2 tsp toasted rice powder (optional, for nuttiness)
Directions:
In a bowl, combine fish sauce, soy sauce, brown sugar (or palm sugar), lime juice, minced garlic, chopped chilies, salt, and pepper to make the marinade.
Add the steak slices to the marinade, tossing to coat. Cover and refrigerate for at least 1 hour, or overnight for deeper flavor.
Meanwhile, prepare the Nam Jim Jaew dipping sauce by combining fish sauce, lime juice, brown sugar, chopped chilies, shallot, cilantro, and toasted rice powder in a bowl. Stir until sugar dissolves; set aside.
