Contagious Q

We are not a restaurant or catering company. We got started in BBQ several years ago after relocating and finding that great BBQ was nearly impossible to find. After all the research and trials (good and bad), I have finally perfected the recipes that truly makes our Q unique. After mastering the backyard trials, we thought it would be fun to step it up a notch and compete with the pros at KCBS BB

Q competitions. This is our first year out and I’m not sure what to expect but I do know that we got game. I created this page for family and friends to easily follow us in our first season’s endeavors competing as a pro competition BBQ team. I will post the competition schedule along with results and pictures from each event.

And we hit the road again and cooked a “local” event that never disappoints! The 20th anniversary 2024 Bloomin’ BBQ Music and Food Festival is in the books! Bob Johanns and the city of Sevierville in Tennessee do a great job with this event for both the teams and the public! Big thanks to them and Bush’s Beans and Swaggerty’s sausage for sponsoring the event! It was a great weekend and the severe weather went all around us! Just a little rain drizzle Saturday morning! Had a great time seeing and hanging out with old friends and making new ones as always!

For the cook: The reduced cook schedule really takes a lot of focus to deliver good product when you don’t have the muscle memory from cooking week in and week out! We did just that and delivered 4 categories that I would turn in anywhere! Had to make an adjustment on chix due to a discontinued ingredient and we were very pleased with the results. Made a slight adjustment to pork where that has been the weak link the past few cooks. With a field stacked with heavy hitters, we hung in there but, the judges have spoken. We were not a fan favorite this weekend. Results were the following:

Chix - 12th place
Ribs - 25th place 😬 maybe TOD🤷‍♂️
Pork - 4th place 🎉😅
Brisket - 17th place

This was good enough for 14th overall out of 31 great teams! Huge congrats to Rooter-N-Tooters on Grand and Blue Chip BBQ on Reserve! Another big thanks to Jason Hardee (Elite BBQ Smokers) for hosting Cook’s church! Always a great message!

Not sure when or where we will land next…at this time! Keep the smoke rolling!

And we kicked the rust off (again) and burnt some meat at the Smoke on the Falls event in Gadsden Alabama! Had a great time cooking and seeing old friends and making new ones! Alway’s love coming to Gadsden to cook! The weather was beautiful and couldn’t ask for better weekend to be outside! Thanks to Janet Tarrance for running such a smooth event!

So we haven’t cooked since December. Had a surprise busted water line on the sink faucet that was revealed when power was established. Made a quick run to Lowe’s Thursday night for some parts to bypass and make a temporary auxiliary hot water line until a permanent repair could be made later (ongoing adventures in bbq).

There’s a lot of new teams and we just decided to stick with the same flavor profile as last year. With no expectations, the plan was to go out, have fun and get all 4 categories turned in on time. We managed that and got lucky with a few calls also! Results were the following:

2nd Place Chix!
6th Place Rib!
19th Place Pork 🤷‍♂️ - probably going to need an adjustment
2nd Place Cow!

This was good enough for 3rd place overall out of 31 top notch teams! Congrats to We will Rock ‘Que on Grand and Fred Vegas Smokers on Reserve and all who heard their names called this weekend! Looking forward to doing this again sometime down the road!

Throwing down some Prime brisket today! No experiments or recipe changes. Just cookin what we know! One of these had a cut 2/3’s through the flat! We finished it off! Can you guess which one it is?
Also, one of these nice Sam’s club Prime’s was top notch and comp worthy! Unbelievable prime brisket! Any guesses on that one? Probably hard to tell with the rub…

So we haven’t cooked a contest since December. There’s a lot of new teams and wasn’t sure if flavor profiles changed. We just wanted to go out, have fun and get all 4 categories turned in on time. We managed that and got lucky with a few calls also! Results were the following:

2nd Place Chix! (Tied for 1st 🙃)
7th Place Rib!
20th Place Pork 🤷‍♂️
3rd Place Cow!

This was good enough for 7th place overall out of 32 top notch teams! Congrats to Piglitically Incorrect on Grand and Under the Radar on Reserve and all who heard their names called this weekend! Looking forward to doing this again sometime down the road! Hope to be at Chillin and Grillin in the Glades (Wise VA) in July!

And it’s been almost 6 months since our last competition! Had to knock a little rust off. Also had to do a deep clean on the smokers Thursday night! Sorry neighbors if it was loud!

A little late on the update, this is from last weekend. Been a busy week!

Always love cooking in Alabama especially at the Noccalula Falls Campground! Janet Tarrance does a great job organizing Smoke on the Falls BBQ competition! We had 38 pro teams competing!

Thought we had a pretty good cook considering the time off. We were happy with all of the turn-ins. Results were the following:

2nd Place Chix - Tied for 1st and lost tie-breaker...Congrats to The Atlanta BBQ Store on 1st!
25th Place Ribs
8th Place Pork
36th Place Brisket 😳

Managed 18th overall! Wasn’t real happy with rib and brisket placing but that’s how it goes. Just happy with the chicken and getting everything turned in on time after so long off.

Congrats to Chicken Fried BBQ on the Grand Championship and LC BBQ on Reserve!

Big thanks to Royal Oak Charcoal for fueling the fires and The Atlanta BBQ Store for their Great products and speedy delivery!

Next cook: TBD

And no comp pics in this post but, we went outside the comfort zone this last weekend and cooked up a tri-tip!

Heard a lot about them and asked Kevin Green, from the , to add this to a brisket order awhile back and finally got a chance to cook it! Have to say...It was pretty amazing and will definitely order again!

We cooked it utilizing the reverse sear method over charcoal and a blend of hickory and mesquite wood. Slow smoked on a WSM at about 210 degrees until the internal temp was between 110-115 degrees. Then finished off on a Weber kettle, with grill grates reading 600+ degrees, until internal temps were reading 135-145 for a good medium-medium rare. Made a horseradish/garlic/dill sauce to compliment. The thyme garnish was mainly to make, hopefully, a prettier pic ! However, a few leaves sprinkled on top definitely added some nice flavor!

As for us, we’ll be hitting the BBQ trail again in April. This is longest stretch since our start in 2013 without the trailer moving. Definitely going to be interesting! Looking forward to seeing everyone and getting back at it!

And we’re proud to a part of the Royal Oak Team again in 2021!

We thank Royal Oak for not only having the best products in the business but also their ongoing support for the sport of Competition BBQ!

Despite the challenges of 2020 and limited travel, we managed to squeak a few contests in and earned a Reserve Grand, a 1st place rib and, consistent top 5 pork.

Not sure what 2021 is going to bring but looking forward to hitting the BBQ trail!

And the heavens gained another great soul. We’ve lost an awesome BBQ friend today. Rest In Peace Jeff Cole. It was always a great time when Anyone was around you. You were always full of laughter and friendship! Continued prayers for you, your family and friends...
