Jicama (aka Singkamas or Yam bean) is a root crop native to Mexico and Central America, but is now grown in many tropical areas.
Interestingly it is actually in the bean family, but only the ROOT is edible, as all above-ground parts of the plant are poisonous 🤯 The flesh of the root is crispy, juicy and somewhat sweet. It is low in calories and fat, while being high in fiber and Vitamin C. It’s high fiber content make it a low glycemic index (GI) food, meaning it doesn’t cause blood glucose levels to spike, making it a great option for anyone watching their sugar intake!
