You might be buying more than just regular cut beef at the grocery store counter 🥩

When meatpackers trim primal cuts, a lot of fat and small bits of muscle stay stuck to the bone. To salvage that extra protein, processors run those cold trimmings through high-pressure mechanical separators that spin out the fat. What comes out is a finely ground pink protein paste treated to reduce bacteria and then frozen into dense blocks.

Under official food safety rules, meat plants can blend this product into standard ground beef packages up to around 15 percent by weight. Because federal standards classify it as legitimate beef, stores don't have to put a special warning or separate label on the front package. It simply blends right into the burger mix you buy for dinner.

This stellar farm property sits among the northern Berks County hills near the base of Blue Mountain. Berger Road winds through prime crop acreage where local multi-generational families typically produce corn, wheat, alfalfa, soybeans, or manage dairy cattle.
