Many don’t know but I am half Persian. My grandma was the queen of cooking in our family and my primary influence for becoming a chef. Lately I’ve been making more Persian food. This was one of grandmas staples. Fessenjoon is braised chicken or duck in a bright, rich gravy of ground walnuts, pomegranate molasses and saffron. It is simple yet so complex in flavor. Mike wasn’t good but didn’t compare to hers.
