Every time I’m around my family they ask me to make fried catfish and étouffée. If you’d want to become the designated fish fryer in your family try my recipe the next time you make catfish. The written recipe is in my cookbook on my blog.

Baked spaghetti. I make this the way my momma did using just cheese, evaporated milk, and butter. I add cheddar and pepper jack in equal amounts. Then I add a little Velveeta. Like if I’m using 8 oz of cheddar and pepper jack then I’ll add 2 oz of Velveeta. I prefer to use Velveeta because of how much better the other cheeses blend together and melt than any other method I’ve tried. My mama knew what she was doing! So I’m gonna do it like she does it. You can use mozzarella if you want to substitute the processed cheese.
