Been so busy, I didn’t get a chance to share here the final product….. 48-day dry aged beef rib … aka Dino Rib!

This beef rib loin has been Aged in the Himalayan salt block dry ager by .aging_room … to prep the loin, I wipe it down with bourbon from and cover it in beef tallow that I render in house. It’s a true labor of love. From start to finish!
