In 2011, Josh Saltzman and a college buddy started a little food truck in Washington, DC called PORC: Purveyors Of Rolling Cuisine. With a simple menu of smoked meats, such as pulled pork and housemade pastrami, they ventured to make DC a tastier place. A barbecue restaurant with a silly name, Kangaroo Boxing Club, soon blossomed and then morphed into a deli, called The Good Silver. By this point, the team had expanded to include sausage and charcuterie geniuses, Aaron Kushner and Jeb Gavin, and another Michigan grad, Chris Powers. Now, it was finally time to make the cured business happen. So, we started with a simple idea: To make modern meats the old school way. And so, Epic Curing was born.
Epic Curing is your source for quality deli meats made the old school way, and creative cured products made with both innovation and tradition in mind. Whether you’re a pastrami aficionado in New York or a bacon fanatic in Seattle, Epic Curing is here to provide you with the tastiest meats on the planet.
Our Product Sources
At Epic Curing we believe strongly in making the best possible meats with the best possible product. Whether it's pastrami, guanciale or turkey sausage, everything we make is used sourcing ingredients from the best farms in America and the best spices from around the world. You may notice we don't put organic this and free range that on our packaging. But know that we are very serious about making you the tastiest stuff on the planet. Most of our products are made using organic and free range meat and ALL of them are antibiotic and hormone free. That means using as many small, local farms and collectives as we can, and ensuring the source of this delicious bounty was always treated with care and respect from start to finish. We don't believe in playing the labeling game when it comes to our packaging (e.g. "our ham cures cancer!", "organic beef massaged with shea butter"), but trust us that we always aim to use the highest quality in everything we produce. Our Plant
Epic Curing is based in Landover, Maryland in a small USDA-certified facility that often feels like it's the size of a shoebox. Everything we make is handcrafted by a very small, yet dedicated, staff. All of our products are smoked in a wood-burning Southern Pride smoker that is tended to day and night by people who drink way too much coffee and forget what sleep feels like. If you see that some of our products aren't in stock, please forgive us. As we grow we plan to add much more capacity, but for right now, we aim to make as much top-notch product as we can with what we've got.
Many of our products, such as our sausages, our made in partnership with our friends at Meatcrafters, Inc. who own the space. We feature some of our favorites from them on the website too and highly recommend their stuff!
