A cold weather calls for a hearty bowl of
Beef Mami!! Try our simple recipe.
Ingredients:
• 2 lbs beef bones
• 1 lb short ribs
• 1 large onion, quartered
• 4 cloves garlic, crushed
• 2 celery stalks, chopped
• 2 medium carrots, chopped
• 1 beef bouillon cube (optional)
• 1 pack egg noodles
• 1 small Chinese cabbage, chopped
• 1 carrot, julienned
• 2 boiled eggs, halved
• Chicharon (pork cracklings)
• 2 stalks green onions, chopped
• Salt and pepper to taste
Steps:
1. Clean the meat
Wash the meat and place the beef bones and short ribs in a large pot of water and bring to a boil. Let it boil for 10 minutes, then drain and discard the water. Repeat this process two more times to clean the meat and remove any impurities or residue.
2. Prepare the broth
After cleaning, add the beef bones and short ribs back to the pot. Add onion, garlic, celery, and carrots, then cover with fresh water. Bring to a boil, then lower to a simmer and let it cook gently for 3 hours. Add a beef bouillon cube for enhanced flavor, if desired.
3. Strain and season
Strain the broth to remove solids, leaving a clear and rich soup base. Season with salt and pepper to taste.
4. Cook the egg noodles in the broth
Add the egg noodles directly to the boiling broth and cook until tender, allowing the noodles to absorb the savory flavors.
5. Prepare the veggies and toppings
Saute the Chinese cabbage and julienned carrots in the broth for 3-4 minutes, then set them aside. Slice the boiled eggs, crush the chicharon into bite-sized pieces, and chop the green onions for garnish.
6. Assemble the bowl
In a serving bowl, add cooked noodles, tender short rib pieces, and blanched veggies. Pour the hot broth over the noodles.
7. Add the final touches
Top the bowl with halved boiled eggs, crushed chicharon, and chopped green onions. Serve hot and enjoy this rich and flavorful Beef Mami!
