Breakfast Tacos 🌮 substitute the ingredients to meet your nutritional needs by @ londonbruncher

This is one of my favorite weekend breakfasts - you only need one pan and a handful of ingredients!

1. Add a handful of grated cheese to a lightly oiled non-stick pan.

2. Once the cheese has melted add a beaten egg.

3. When the egg has almost set, top with a tortilla and flip.

4. Add your favourite fillings - mine are avocado, tomato, jalapeƱo, fresh coriander, lime juice, salt & pepper - enjoy!

GARLICKY SPINACH ARTICHOKE⁠
CHICKEN PIZZA⁠
(gluten-free-free • grain-free)⁠
⁠
1 box artisan bread mix • 1 recipe creamy garlic sauce (recipe below)• 2 teaspoons olive oil • 4 cups fresh spinach • 1.5 cups mozzarella cheese • 1 cup canned artichoke hearts, finely chopped • 1 cup shredded chicken breast (prepared however you prefer; rotisserie chicken saves time!) • salt & pepper to taste⁠

1. prepare crust according to ā€˜flatbread’ directions on the back of the box. ⁠
⁠
2) heat olive oil in a large skillet over medium-high heat; add spinach and sauté until wilted, about ~1 minute. season with salt + pepper; remove from pan. ⁠
⁠
3) spread 1/2 cup creamy garlic cheese sauce over baked crust; top with artichoke hearts, shredded chicken, and mozzarella. ⁠
⁠
4) bake at 400 F for ~5-10 minutes, or until cheese is melted and bubbly. sprinkle with red pepper flakes, if desired.⁠

CREAMY GARLIC SAUCE: a blender, combine 1/2 cup cream cheese (dairy-free or regular) • 1/4 cup milk • 1/2 teaspoon garlic powder • salt & pepper to taste⁠

CREAMY GARLIC SHELLS N’ CHEESE: I used chickpea pasta shells from a Banza mac n’ cheese box, then tossed in a homemade sauce, but any noodles work here! For the sauce: in a blender, combine 1/2 cup cream cheese (any works here, including dairy-free cream cheese and chive cream cheese) + 1/4 cup goat cheese crumbles (optional) 1/4 cup almond milk + 1/2 teaspoon garlic powder + salt & pepper to taste; blend until smooth.⁠
⁠
SPICY GARLIC SHRIMP: season shrimp with a jerk or cajun seasoning + paprika, then sauté in garlic ghee until pink and slightly brown.⁠
⁠
SAUTÉED SPINACH & CREMINI MUSHROOMS: heat a small amount of garlic ghee in a medium-sized pan for ~1 minute. Add sliced mushrooms and sauté for 3-5 minutes, seasoning with sea salt, red pepper flakes, garlic powder, and/or any other spices you want to use; remove from pan. With the burner still on, add spinach and sauté 10-15 seconds; remove from pan and garnish with parmesan.

This is a complete meal in one pot that's ready in less than 30 minutes! It's full of sausage, beans, veggies and tortellini, all cooked in a savory tomato broth.

Ingredients
* 2 teaspoons olive oil
* 3/4 cup white onion diced
* 2 stalks celery thinly sliced
* 2 medium carrots peeled, halved and sliced
* 1 19 ounce package Sweet Italian Sausage casings removed
* 6 cups chicken broth
* 1 28 ounce can crushed tomatoes
* 1 15 ounce can white beans drained and rinsed
* 1 9 ounce package refrigerated cheese tortellini
* 3 cups baby spinach
* 2 tablespoons chopped parsley
* salt and pepper to taste

Instructions
* Heat the olive oil in a large pot over medium heat. Add the onion, celery and carrots to the pan and cook for 4-5 minutes or until just softened. Season the vegetables with salt and pepper to taste.

* Add the sausage to the pan; cook for 5 minutes, using a spoon to break up the sausage into smaller pieces.

* Add the chicken broth and crushed tomatoes to the pot, then bring to a simmer.

* Add the tortellini, spinach and white beans to the pot, cook for 5 minutes.

* Season the soup with salt and pepper to taste. Stir in the parsley and serve.

Cajun Turkey & Sausage Soup (low-carb, paleo, Whole30)

āŗFor paleo & Whole30 be sure to use a compliant andouille sausage.

INGREDIENTS
3/4 – 1 pound leftover cooked turkey, chopped or shredded
14 ounces andouille sausage, cut into 1-inch rounds
1 tablespoon Cajun seasoning (if your Cajun seasoning doesn’t have salt, add 1 teaspoon salt)
3 cups low-sodium chicken broth
15 ounces diced tomatoes
1/2 cup onion, diced
1 bell pepper, chopped
1 celery stalk, sliced
1 tablespoon oil (for Instant Pot)

Add all the ingredients to the slow cooker. Stir to mix well.
Cook HIGH 2-3 hours or LOW 4-6.
Instant Pot

Turn on the pressure cooker and select sautƩ. Once hot, add the add oil to the pot. Add onion, bell pepper, celery and cook 3-5 minutes or ,until veggies begin to soften.

Add the broth & deglaze the bottom of the pressure cooker by scraping all the bits off with a wooden spoon.

Add leftover turkey, andouille sausage, diced tomatoes, and Cajun seasoning. Stir to mix well.

Select manual setting, high pressure for 20 minutes. When cook time is done, quick-release the pressure.

Ingredients
Caramelized Onions, Optional
2 large yellow onions
2 Tablespoons butter
1 tablespoon olive oil
Mac and Cheese
6 strips thick-cut bacon, hickory smoked is great
1 lb. medium pasta shells
1/4 cup butter, not needed if you have enough bacon drippings
1/4 cup flour
1 cup heavy cream
2 cups milk
1 teaspoon mustard powder
½ teaspoon dried thyme
¼ teaspoon garlic powder
1 teaspoon hot sauce
1 cup gruyere cheese, shredded
2 cups cheddar cheese, shredded
¼ cup Parmesan cheese, shredded.

Instructions

Make the Sauce/Cook the Pasta

* Note: Now is a good time to start boiling salted pasta water for the shells.

* Heat the bacon drippings over medium heat. Whisk in the flour and stir continuously for 2 minutes.

* Add the heavy cream in splashes, stirring continuously. Don’t add it too quickly or the roux will break. Add the milk in the same manner.

* Add the mustard powder, thyme, garlic powder, and hot sauce. Bring the mixture to a boil, then reduce to a simmer.

* Cook the Pasta until just al dente (refer to package instructions), don’t overcook. Drain.

* Reduce the heat of the sauce to low and let the base cool slightly. Gradually sprinkle in the cheese, stirring continuously until incorporated. Add the caramelized onions, then the drained pasta. Use a silicone spatula to stir until combined.

* Roughly chop the bacon and sprinkle it over the mac and cheese. You may stir some of it in as well.

* Garnish with parsley and serve!

FLOURLESS PEANUT BUTTER BLONDIES⁠
1 cup creamy peanut butter⁠
2 eggs ⁠
1/2 cup coconut sugar or brown sugar OR 1/3 cup honey (*see notes*)⁠
1/2 tsp baking soda⁠
2 tablespoons - 1/4 cup peanut flour (optional)⁠
1/2 cup chocolate chips⁠
⁠
1. Combine all ingredients except chocolate chips in a medium-size bowl; mix until smooth. Fold in chocolate chips and pour into an 8x8-inch baking dish lined with parchment paper. Dot the tops with extra chocolate chips (optional) and bake at 350 F. for 20-25 minutes, or until slightly golden.⁠

**Notes: If using brown sugar, the blondies will have a deeper, golden color and slightly richer flavor. Honey or maple syrup can be substituted for the sugar and yields a gooier blondie.⁠

2 chicken thighs, boneless and skin on⁠
3-4 eggs, lightly whisked (to break the yolk but doesn’t need to be completely whisked together)⁠
1/2 large brown onion, sliced⁠
1/2 cup dashi (1/2 cup water and 1/2 tsp dashi stock powder)⁠
2 tbsp mirin⁠
2 tbsp light soy sauce⁠
1 tsp sugar⁠
Cooked rice⁠
⁠
Garnish⁠
Scallions⁠
Togarashi⁠
⁠

1. In a frying pan on medium heat, place your chicken thighs in the skin side down and cook for 3-4 minutes or until crispy.⁠
⁠
2. Remove the chicken (yes the meat will still be raw!!) and cut it into bite-sized bits⁠
⁠
3. Mix your dashi, mirin, light soy sauce, and sugar - set aside⁠
⁠
4. Add your sliced onions to the pan and sauté for 1-2 minutes.⁠
⁠
5. Add your dashi mixture and then pop in your chicken (I keep skin side up).⁠
⁠
6. Bring to a gentle boil and put the lid on and simmer for 3-4 minutes.⁠
⁠
7. Remove the lid and pour in half your eggs evenly around your chicken, then pop the lid back on and cook until the egg just starts to set - about 1-2 minutes⁠
⁠
8. Pour the rest of your egg on top and pop the lid on for another minute or so.⁠
⁠
9. Get your rice ready and serve your chicken egg mixture on top - make sure to get some of the broth as well!!⁠

Ingredients (4 servings)

For the rolling pin: - 200g low-fat quark - 4 eggs - 50g almond flour - 200g cheese (grated) - 1 tablespoon psyllium husks - 1/2 teaspoon baking powder - 1/2 teaspoon salt

For the topping: - 6 slices of cheese - 60g chicken salami (sliced) - 2 onions - 2 cloves of garlic - 400g chunky tomatoes (1 can) - 1/2 teaspoon salt - 1/2 teaspoon pepper - 50g cheese (grated) preparation Preheat the oven to 180 degrees (convection).

In the first step, the rolling pin is prepared. Separate the eggs and beat the egg whites until stiff. Put the egg yolks, low fat quark, almond flour and cheese (grated) in a bowl and mix together. Add the psyllium husks, baking powder and salt and stir.

Fold the egg white into the dough. Line a baking sheet with parchment paper and distribute the batter evenly on the baking sheet.

Bake for 12-15 minutes. Chop the onions and garlic into small pieces.

Take the baking sheet out of the oven. Brush the dough roll with the chunky tomatoes and top with onions, garlic, cheese slices and salami.

Season with salt and pepper. Roll up the rolling pin and cut into 8-12 pieces. Lay the dough pieces flat next to each other on a baking sheet and sprinkle.

Add 1 tablespoon oil to a pot or large pot or dutch oven, brown beef, onion, and garlic over medium-high heat for 7-8 minutes or until the ground beef is browned through.⁠

Add the bell pepper, Rotel diced tomatoes, cream cheese, and spices. Stir for 4-5 minutes or until tomatoes are soft and tender and cream cheese is mixed through.⁠

Pour in beef broth and reduce heat to low-medium. Simmer 15-20 minutes or until desired thickness is achieved.⁠

Serve in small soup bowls. Top with freshly sliced avocado, sour cream, shredded cheese, freshly minced cilantro, jalapeno, and a drizzle of lime.⁠

LEMON RICOTTA BLUEBERRY PANCAKES (serves 1-2)⁠
⁠
1 egg + 2 egg whites • 1/2 cup ricotta cheese (dairy-free or regular) • 3 tbsp. coconut flour (no substitutions) • 1/4 tsp. baking soda • 2 tbsp. milk (almond, cashew, dairy) • 1.5 tsp. vanilla extract •1/2 tbsp. lemon zest • 1 tbsp. granulated sweetener • 1/2 cup blueberries⁠
⁠
mix all ingredients except blueberries in a blender or food processor, until smooth. (alternatively, you can mix ingredients by hand in a medium-sized bowl). fold in blueberries. heat a medium-sized pan for 1-2 minutes over medium-high heat; grease with butter (oil may be used, but butter creates the best flavor) and pour 2-3 tablespoons of batter into the pan. cook the pancakes until golden brown and fluffy, about 3-4 minutes. repeat with remaining batter. top with butter + maple syrup!
