JUNETEENTH
June 19th is Monday, I am celebrating this weekend. A traditional Juneteenth dinner would be BBQ, potato salad, baked beans, collard green, cornbread, deviled eggs, red velvet cake, yellow meat watermelon, and strawberry soda pop.

POTATO SALAD
I am gonna repurpose this loaded baked potato into a Juneteenth salad.

8 strips of bacon, fried crispy and crumbled, 6-8 large russet potatoes, scrubbed well, 1 lb. ground beef, 1 T. olive oil, 1 tsp. sea salt, 1 1/2 cups cheddar cheese, grated, sour cream green onions, ranch dry seasoning, and ranch salad dressing
Preheat the oven to 425 degrees. Rub the potatoes with olive oil. Poke a bunch of holes in the potatoes with a fork. This step prevents the possibility of the potatoes exploding in the oven. Bake the potatoes until they are tender. When the potatoes cool, dice them. Put the diced potatoes into a large bowl. Sprinkle with salt, pepper, and granulated garlic, mix well, taste, and set aside. Get out a heavy skillet, heat to medium, and mix 1/2 cup of chopped white onions, 2 minced garlic cloves, beef bouillon, and black pepper and the remaining ingredients. Add the ground beef and cook to medium well. Taste and adjust dry seasoningif needed. Assemble your salad and serve.

Golden Cauliflower Puree

First time I've ever made it. I just winged it by looking at several recipes.
It takes a lot of additions to get to the perfect taste, but, then it's delicious!

Makes one bowl

1 quarter head golden Cauliflower broken into large heads (or you could use purple or white Cauliflower)
1/4 diced onion

Steam together in a heavy bottom pot till very tender.

While steaming :

Add 1 large k**b of butter in your food processor
Same amount cream cheese
Heaping Tbls sour cream
A handful of shredded cheddar
Salt and pepper to taste
A teaspoon of dry bouillon (chicken)
A sq**rt of sriracha

Give them a little pulse till mixed

Drain Cauliflower and onion till very dry. Add to wet mixture and blend till pureed

Scrape into a bowl, add a pat of butter, adjust seasonings, Sprinkle with more cheese and heat in microwave till cheese melts.

Sprinkle with fresh cut green onion tops and bottoms and crumpled bacon if you have it.

I'm eating this as my meal since it's low carb and I'm trying to maintain my weight-loss.
