Most weekends I try to bake at home and making granola is one of my favorites. It's super easy, and you can control what goes in it, like amount of sugar, remove nuts if you are allergic, add seeds for more protein, add freeze dried fruits... and the smell of it when it bakes - YUM! That alone makes it worth it.
You can bake it at a very low oven (200F) for over 1 hr, or if you need it quick, you can use the method below, but you have to be glued to the oven and check often.
Here we go:
2 1/2 cups Rolled Oats;
3/4 cup Rice Crisp Cereal;
1/4 cup Flax Seeds;
1/4 cup Brown Sugar;
1/4 cup Maple Syrup or agave
1 Tbsp Coconut Oil, melted;
1/4 tsp Salt;
1/2 tsp Vanilla Extract
1/2 cup Golden Raisins;
1-Pre Heat the oven to 350F
2-Combine oats, cereal, flax seeds and sugar in a large bowl;
3-Mix agave or maple syrup, coconut oil, and salt.
4-Stir onto cereal throughly. Spread thinly onto greased sheet pans and bake for about 20 minutes, stirring every 6 minutes so edges doesn't burn.
5- Remove from oven and mix in vanilla well. Keep stirring every 5 minutes so it doesn't make large lumps till cooled. Add Raisins once completely cooled.
6- Store in airtight container at room temp for up to 2 weeks. For ultimate freshness, keep it frozen.
