I took 6 knives to Jay's (5 Kaji and 1 Shun). The Shun blade tip was broken and one of the Kaji's had a nick in the cutting blade. Jay's fixed both to perfection, but that is not why I'm writing this recommendation. All these knives are super sharp, and I mean super sharp. While in the shop, I barely touched the new tip of the Shun and, yes indeed, I managed to cut myself. Yes, they also have bandaids for customers like me. To top it off, I also managed at home to cut myself again. So, Jay's is certainly the 'Sharpest in town since 1975' and the cost of sharpening is very reasonable.
Thank God , I have found a really fantastic Sharpening service,, You guys rock.. Jerry DeRiso, Pgh,pa RIP was the best in the U.S,, Now you guys are,,, Thank you again,, wonderful people still live in Las Vegas.
