I have recently taken an 83-year-old neighbor under my supervision. She is living with severe dementia and memory loss. It is heartbreaking—she cries often, gets overwhelmed easily, and frequently believes people have stolen her handbag and other belongings. She is completely isolated, with no friends and no contact with her sisters or children.

Physically, she is 5'4", 149 lbs., with 34.5% body fat, 25% muscle mass, and a bone density of 2.5. Hydration is bad too at 53.4%.

Can we reverse her condition?

I believe dementia can be heavily managed and improved with a proper diet, light exercise, and daily sunlight. The absolute first step is cutting her sugar intake to zero. Right now, her diet is a disaster: cereal for breakfast, pasta and bread for dinner, almost no meat, big bottles of juice, sweetened yogurt, and frequent fast food. Her fridge had zero vegetables, so we just loaded her up with leafy greens.

More than 6 million Americans live with dementia and Alzheimer's. If you have a parent or a neighbor dealing with this, please step up and help.

Watch this space as we document our journey and work on her health. It is going to take superhuman levels of patience. Luckily, she is willing to try.

The Egg Myth: Runny Yolks vs. High Heat
Think cooking eggs destroys the protein? Think again! 🤯 Heat changes the protein’s shape, but your body actually digests cooked egg protein better than raw.
So why do experts recommend poached or soft-boiled eggs? It’s all about protecting the cholesterol and fats!
When you fry eggs at super high heat, the healthy fats oxidize. This creates AGEs (Advanced Glycation Endproducts) which can cause inflammation and stiffen arteries.
The Fix:
Go for low, moist heat! Poaching, boiling, or gentle steaming keeps the nutrients perfect and protects your heart. ❤️

My mom is 83, and after years of encouraging her, she has finally started doing weight training.

The message became even more personal after my dad passed away two years ago from a fall.

Aging does not have to mean losing strength, balance, and independence. Without resistance training and proper nutrition, the risk of muscle loss, weaker bones, and falls increases significantly.

Research shows that older adults who begin light resistance training just 2–3 times per week — using resistance bands, dumbbells, or bodyweight exercises — can make remarkable improvements in strength, balance, bone health, and walking ability.

It is never too late to start building a stronger body.

I got a call two weeks ago from a customer who has stage 4 Kidney disease with sheer panic. Yes, she has diabetes and high blood pressure. Your kidneys work around the clock to filter waste and keep your body healthy—but two common conditions can silently damage them: high blood sugar (diabetes) and high blood pressure (hypertension).
When blood sugar stays high, it scars the kidneys' tiny filters, causing them to leak protein and lose function. High blood pressure then puts even more strain on these delicate blood vessels, reducing blood flow and accelerating damage.
Together, they create a dangerous cycle that can lead to chronic kidney disease and kidney failure—often with no noticeable symptoms until significant damage has already occurred.
The good news? Managing your blood sugar and keeping your blood pressure in a healthy range are two of the most effective ways to protect your kidneys.
❤️ Take care of your kidneys—they're taking care of you.

Tired of the aftertaste of bone broth—especially when it's made with vinegar? Try adding a Ceylon Cinnamon stick while it simmers. It helps mellow the sharp aftertaste and gives your broth a richer, smoother flavor.

Want 90% More Vitamins From Your Greens? Stop Boiling Them!
If you’re boiling your spinach, kale, or Bok Choy, you are literally pouring your nutrition down the drain. Here is the ultimate, science-backed guide to cooking leafy greens for maximum health benefits!
The 90% Vitamin C Rule: STEAM IT
Vitamin C is water-soluble and hates heat. To retain 85% to 90% of it, you need to cook fast and keep your greens completely out of the water.
• Water Spinach: 2 mins
• Baby Bok Choy & Choy Sum: 2-3 mins
• G*i Lan, Napa Cabbage, & Regular Bok Choy: 4-5 mins (Slice thick stems lengthwise so they cook fast!)
• Kale & Collards: 6-8 mins (Chop into thin ribbons!)

The Oil Hack: Unlock Vitamins A & K
Leafy greens are packed with Vitamins A, K, and Lutein. But here is the catch: they are fat-soluble. Your body physically cannot absorb them without dietary lipids.
• Always drizzle a healthy oil (Extra Virgin Olive, Avocado, or Toasted Sesame Oil) over your greens after steaming.
• This unlocks the nutrients, carrying them straight into your bloodstream!

The Tamari Secret: Better Digestion
Skip the standard soy sauce and splash some Tamari on your greens instead:
• Authentic tamari is naturally fermented, creating organic acids that help your gut digest tough plant fibers.
• It boosts your absorption of the calcium and magnesium already inside the greens.
• It’s 100% wheat-free/gluten-free and packs 18 different amino acids!

Steam your greens till they are bright green Drizzle with healthy oil to absorb Vitamins A & K Splash with Tamari for digestion and minerals!

This recipe was inspired by my Shih Tzu, Obi, who refuses commercial dog food but loves slow-cooked beef with a little rich broth. Made with collagen-rich beef shank, butternut squash, collard greens, red rice, red lentils, Ceylon cinnamon, and a touch of coconut oil.
