We've been busy today here at the #SNBC / #SRBC compound. We're very excited, because today we're brewing our first lager, the Lager Cabin Doppelbock, in order for it to be ready for Autumn. Our Barrel-Aged Scotch Wee Heavy is now aging nicely on some Macallan 12 Year oak. We kegged and bottled our special release Red, White and Brew IPA so it will be ready in time for Independence Day. And finally, we split a batch of our Avalanche Belgian Witbier and added Katy Apricots to one half, and Bosc Pears to the other to create something truly special in time for summer. Can't wait for all of these to be ready so we can share them with all of you! Thanks for your continued support!

We just found a corny full of a Belgian Tripel that we brewed over a year ago that has been cellaring at 45 degrees this whole time. AND IT IS AMAZING. Sometimes hiding beer from yourself has awesome benefits.

We recently got together with our yeast guru, the Mad Scientist, and put together a recipe for our first honey mead pilot batch. We decided to make things a little interesting by throwing in 3 fresh nectarines for a unique flavor addition. Something tells us that 1 gallon isn't going to be enough.

We've been busy lately!

BBA HopScotch Wee Heavy and Quantum Quadrupel went into bottles and are naturally conditioning.

We blended the Mad Scientist Stout with a substantial amount of cold-press premium espresso from SoCal native Coffee Bean & Tea Leaf, and we must say, it smells incredible.

We seem to be all about the Belgians lately, so we brewed our Trappistfaction Tripel and Dubbel Take, and those are fermenting well under temperature control.

We've got a couple more great beers planned for the near future, so stay tuned.

Yesterday, we generously dryhopped our Re-Evolver Imperial IPA with almost 2 pounds of hops per barrel! This beer is a monster at 9.3%ABV, 119 IBU's, and a total of 4lbs of hops per barrel! #craftbeer #beer #beerporn

Our 2 year old Dark Horse Honey Porter is starting to taste a lot like a sour brown, and we don't mind it a bit. So we're going to brew the same recipe and finish it with Brettanomyces! Stay tuned for a brand new Brett conditioned Belgian Dark Strong ale based on the Dark Horse Honey Porter recipe!

After a bit of a brewing hiatus, we are excited to get back to doing what we love. We will now be focusing more energy on limited edition rare beer styles, barrel aging, and sours, in extremely low batch sizes. This will allow us to get creative with our beer in ways that we haven't explored in the past.

We have also started an Instagram page @SoNevBrewCo, and we will also be uploading brewing videos to our brand new YouTube channel. We want to show our fans that professional quality beer can be brewed right on a stove even in an apartment setting. We will give more details on this as we have them.

Stay tuned for all of these exciting new projects we are working on, and we appreciate your feedback!
