I’m no doctor or nutritionist, but with the combo of health conditions like I have, I try to achieve a balance. It’s what keeps me sane! 🤪
Leftover steak (just a couple of ounces), a potato, some jalapeños, cheese, and a sunny side up egg. All of it was cooked in canola oil.
Here’s the balance…
I shared the potatoes and steak with my daughter in an effort to limit carbs from the potato. I really enjoy this meal with this type of egg and so I limited the amount of cheese. I cooked the egg in the same oil as the potatoes and steak, so no added oil but added flavor!
I’m sure it’s not perfect in the calorie department but I’m also hoping the carbs and protein will sustain me through the day so that I can have a snack or 2 between now and dinner.
