Leftover steak (just a couple of ounces), a potato, some jalapeños, cheese, and a sunny side up egg. All of it was cooked in canola oil.

Here’s the balance…
I shared the potatoes and steak with my daughter in an effort to limit carbs from the potato. I really enjoy this meal with this type of egg and so I limited the amount of cheese. I cooked the egg in the same oil as the potatoes and steak, so no added oil but added flavor!

I’m sure it’s not perfect in the calorie department but I’m also hoping the carbs and protein will sustain me through the day so that I can have a snack or 2 between now and dinner.

I’ve grown to love store bought naan. Calories are a smidge lower, carbs are manageable, flavor is awesome, and they’re versatile!

I’m excited to share this one! The meat is marinated pork medallions from Costco 🤤. On the right are pierogies. The rest of the fam gets theirs in butter. Mine got heated in a fry pan with onions and EVOO. The salad was a mish mosh of stuff I just needed to use and it complements the pork sooooo well! Corn, black beans, grape tomatoes, onion, cucumber, sunflower kernels - the dressing is Italian dressing mix with plain Greek yogurt, some red wine vinegar, a little Stevia, onion and garlic powder.

This meal is also a good representation of that mental switch I had to have of combining heart healthy foods, some carbs, and good proteins.

It’s been a while... because I’ve been on a journey of figuring out low carb AND low fat. Finding out my cholesterol was high, added another food twist. I’m still figuring it out but excited to start adding more here! Stay tuned!

I’m realizing that I prefer a Mexican twist to my eggs lately. I measured 2oz of a leftover cheese enchilada and manufactured an egg white scramble with it. Calories are under 350 and carbs are barely 10g. Lots of work to measure but worth it.

I’ve been a little MIA for a little while. Here’s why... I started my low carb journey when the height of when the quarantine began. At that same time, I was officially 110% working from home. Low carb + a more sedentary life = RAPID weight gain. But low carb is so healthy I kept telling myself! Well turns out when you can’t do Keto, low carb actually equates to high calorie. 🤯 Thanks to a cousin’s recommendation I started working with a few months ago. I’m down almost 10 lbs but I’m learning there has to be a balance of carbs and that I can’t completely eliminate them. I’m learning better choices and love celebrating little wins like this one...

It’s an omelette with pepperjack cheese and leftover fajita veggies. It’s low cal AND low carb!!

Dinner...doesn’t look special but I wanted to share because I used keto hamburger buns. 1 net carb in the bun when all is said and done. Such a fantastic alternative to have a bun and a burger the “normal way”. Bacon cheeseburger with a little kickin ranch to add a teeny bit of flavor and moisture for the win!

Breakfast today was an idea stolen by another Facebook friend. I added a low cal, high fiber English muffin and it was a fantastic breakfast!! Not gonna lie, I couldn’t eat it all!!

Egg white and avocado salad for the win. Keto bread toast....BIG loss. The toast was so dry and almost tasteless that it hindered the salad big time. The only carbs in my egg salad came from the avocado and I took out the yolks to cut some cals. Oh and I traded the toast for the LC tortilla chips I made a few days ago. Now it’s a win win.
